Preheat the oven to 200°C/ 180°C (fan)/ 400°F/ Gas 6
Cut the potatoes (skins on) into chunky chips, then strip the rosemary leaves and chop them roughly
Add the chips to a baking tray with a drizzle of vegetable oil, a generous pinch of both salt and pepper and sprinkle the chopped rosemary over
Put the tray in the oven for 25-30 min or until golden
Meanwhile, peel and grate the brown onion[s] into a bowl and add the beef mince, panko breadcrumbs and a pinch of salt and pepper
Mix well and divide the beef into 2 [4] and shape into patties
Cut the cheddar into 8 [16] pieces
Top the middle of each patty with 4 pieces of cheese, seal them in with the beef (make sure there are no gaps) & refrigerate until later
Meanwhile, cut the tomato[es] into small, bite-sized pieces
Peel and finely chop (or grate) the garlic
Heat a pot with 2 tbsp [4 tbsp] olive oil over a medium heat
Once hot, add the tomatoes with a pinch of salt and cook them for 2-3 min
Add the chopped garlic and tomato paste and cook for 1 min further
Add the balsamic vinegar, 100ml [150ml] water and 2 tsp [4 tsp] sugar and bring to the boil
Cook for 5-6 min or until the tomatoes have broken down and the sauce is the consistency of ketchup
Once thickened, season with a pinch of salt and remove from the heat – this is your homemade ketchup
Meanwhile, cut the brioche roll[s] in half
Heat a large, wide-based pan (preferably non-stick) over a high heat
Once hot, add the brioche, cut-side down, and toast for 3 min or until coloured and charred on one side only
Once charred, remove and set aside (keep the pan for the next step)
Return the pan to a medium-high heat with a drizzle of vegetable oil
Once hot, add the cheesy patties and cook for 3 min on each side or until they're browned
Tip: press the patties down with a spatula so that they keep their shape!
Once browned, transfer the cheesy patties to a baking tray and put the tray in the oven for 15-18 min or until they're cooked through
Meanwhile, chop the basil roughly, including the stalks
Add the chopped basil to a pestle & mortar with a pinch of salt and a drizzle of olive oil and grind to a paste
Add 1-2 tbsp more olive oil and mix to combine – this is your basil oil
Combine the white wine vinegar with 2 tbsp [4 tbsp] olive oil with a pinch of salt and pepper – this is your dressing
Wash the baby leaf salad, then serve the cheesy patties over the toasted brioche with the rosemary chips and salad to the side
Drizzle the salad with the dressing
Spoon the basil oil and homemade ketchup over the patties and enjoy!
