Cooking Instructions
Instructions for 2 people (double for 4)
1 One-Pot Mexican Beef, Rice & Beans

Deseed the red pepper[s] (scrape the seeds and pith out with a teaspoon) and dice

Peel and slice the red onion[s]

 

2 One-Pot Mexican Beef, Rice & Beans

Heat a large, wide-based pan (preferably non-stick, with a matching lid) with a drizzle of vegetable oil over a medium-high heat

Once hot, add the sliced onion and red pepper with a pinch of salt

Cook for 2 min or until starting to soften

3 One-Pot Mexican Beef, Rice & Beans

Add the ground cumin, ground coriandersmoked paprika and chilli flakes (Can't handle the heat? Go easy!) and cook for 1-2 min or until fragrant 

 

4 One-Pot Mexican Beef, Rice & Beans

Add the beef mince to the pan and cook for 2 min, breaking it up with a wooden spoon as you go 

Crumble in the beef stock cube[s] and add the tomato paste

Cook for a further 2 min or until the beef is browned all over

Add the basmati rice and give everything a good mix up

5 One-Pot Mexican Beef, Rice & Beans

Add the chipotle paste and 250ml [500ml] cold water to the pan and bring to the boil over a high heat

Once boiling, reduce the heat to low and cook, covered, for 10-15 min or until all the water is absorbed and the rice cooked

Tip: add a splash more water if it's looking a little dry!

6 One-Pot Mexican Beef, Rice & Beans

Meanwhile, pick the coriander leaves from the stems, discard the stems

Drain and rinse the black beans

7 One-Pot Mexican Beef, Rice & Beans

When the rice is cooked, stir through the black beans and cook for a further 2 min or until the beans are warmed through – this is your Mexican beef, rice & beans
