This umami-rich, sweet, sticky dish uses soy, ginger, sesame and garlic to flavour and marinate the beef mince before pan-frying. We've added grated apple into the mix to keep the meat tender whilst crisp. This authentic Korean dish can be made in a variety of ways, and graces the streets of Seoul at practically every turn.

Cooking Instructions
Instructions for 2 people (double for 4)
1 Korean Beef Bulgogi

Add the basmati rice and 350ml [700ml] water to a pot with a lid and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 10-15 min or until all the water has absorbed and the rice is cooked

Once cooked, remove from the heat and keep covered until serving

2 Korean Beef Bulgogi

Meanwhile, cut the green beans in half

3 Korean Beef Bulgogi

Peel (scrape the skin off with a teaspoon) and finely chop (or grate) the ginger

Peel and finely chop (or grate) the garlic

Trim, then slice the spring onion[s] finely, keeping the whites and greens separate

Grate the apple[s] (skin on) into a large bowl

4 Korean Beef Bulgogi

Add the beef mince, chopped ginger, chopped garlic, whites of the spring onion, soy sauce, toasted sesame oil and 2 tsp [4 tsp] sugar (brown preferably) to the grated apple and mix thoroughly with clean hands

5 Korean Beef Bulgogi

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a high heat

Once hot, add the beef mince and the green beans

Spread the mixture out like a pancake and cook for 4 min, without stirring

6 Korean Beef Bulgogi

Flip the meat, and cook for a further 4 min on the other side

Once cooked, break up the meat into rough, bite-size pieces - this is your bulgogi

7 Korean Beef Bulgogi

Meanwhile, add the spring onion greens to the cooked rice, fluff with a fork and season generously with salt and pepper

Tip: for fancy presentation, pack the rice down into small cups or bowls and turn out on to the plate
