Cooking Instructions
Instructions for 2 people (double for 4)
1 Korean Beef Bibimbap & Smashed Cucumber

Smash the cucumber with a rolling-pin and chop it into large, bite-sized pieces

Tip: By bruising the cucumber the water is drawn out more easily

Top, tail, peel and grate the carrot[s]

Combine the smashed cucumber and grated carrot in a medium bowl with a pinch of salt and set aside

Add the basmati rice and 350ml [700ml] cold water to a pot with a lid and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 10-15 min or until all the water has absorbed and the rice is cooked

Once cooked, remove from the heat and keep covered until serving

3 Korean Beef Bibimbap & Smashed Cucumber

Meanwhile, peel and finely chop (or grate) the garlic

Peel (scrape the skin off with a teaspoon) and finely chop (or grate) the ginger

Trim, then slice the spring onion[s] finely

4 Korean Beef Bibimbap & Smashed Cucumber

Heat a large, wide-based pan (preferably non-stick) over a medium heat

Once hot, add the beef mince and cook for 3-5 min, breaking it up with a wooden spoon as you go

Once browned, add the chopped garlicginger and spring onion and cook for 1-2 min or until fragrant

Add the soy sauce and honey and cook for 1 min further – this is your bulgogi

5 Korean Beef Bibimbap & Smashed Cucumber

Whilst the bulgogi is cooking, drain any excess water from the smashed cucumber and grated carrot

Return the drained veg to the bowl and add the rice vinegar

Give everything a good stir and set aside – this is your pickled veg

6 Korean Beef Bibimbap & Smashed Cucumber

Transfer the bulgogi to a bowl and return the pan (no need to wash it!) to a medium heat with a drizzle of vegetable oil

Once hot, crack the eggs into the pan

Cover and cook for 3 min or until they're done to your liking

Meanwhile, combine the chipotle paste and miso paste with 1 tbsp [2 tbsp] of cold water in a small bowl – this is your spicy miso sauce
