Cooking Instructions
Instructions for 2 people (double for 4)
1 Double Chipotle Burger

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Cut the potatoes (skins on) lengthways into chips 

Add them to an oven-proof tray, drizzle with 1-2 tbsp vegetable oil, season generously with salt and put the tray in the oven for 30 min or until crisp

2 Double Chipotle Burger

Peel and finely slice the red onion[s]

Heat a large, wide-based pan (preferably non-stick) with 2 tsp [4 tsp] olive oil over a medium heat

Once hot, add the sliced onion with 1/2 tsp [1 tsp] of both salt and sugar 

Reduce the heat to very low and cook the onion until serving or until they're softened and caramelised

3 Double Chipotle Burger

Meanwhile, season the beef mince with 1 tsp [2 tsp] of both salt and pepper

Massage the meat with clean hands for 1 min (this helps them to hold their shape whilst cooking)

Divide the mince into 4 [8], shape them into patties and refrigerate until later

4 Double Chipotle Burger

Heat another large, wide-based pan (preferably non-stick) over a high heat

Cut the brioche rolls in half 

Once hot, add the brioche cut-side-down and cook for 3 min or until lightly toasted 

Once toasted, transfer them to a plate and keep the pan 

5 Double Chipotle Burger

Combine the mayonnaise with the chipotle paste in a small serving bowl and season with salt and pepper - this is your chipotle mayo

6  Haddock In Cheesy Chive Sauce

Wash the little gem[s] and remove 2 [4] whole outer leaves and set aside for serving

Tear the remaining leaves into bite-size pieces

Add the torn leaves to a bowl and toss with 1-2 tbsp olive oil and season lightly with salt and pepper

7 Double Chipotle Burger

Return the brioche pan to a medium heat with a drizzle of vegetable oil

Once hot, add the chilled patties and cook them for 4 min on each side or until they're cooked through

Tip: keep pressing the patties down with a spatula to keep them flat
