This burrito bowl has all the delicious flavour of a burrito – without the extra carb from the tortilla! Crispy cumin beef sits on top of fragrant rice next to smoked paprika and lime refried beans and a tomato and little gem salad. (Naturally gluten-free, but unsuitable for coeliacs).

Cooking Instructions
Instructions for 2 people (double for 4)
1 Beef & Black Bean Burrito Bowl

Add the basmati rice and 175ml [350ml] cold water to a pot with a lid and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 10-15 min or until all the water has absorbed and the rice is cooked

Once cooked, remove from the heat and keep covered until serving

Meanwhile, dice the tomato[s]

Shred the little gem lettuce

Peel and finely chop (or grate) the garlic

3 Beef & Black Bean Burrito Bowl

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a high heat

Once very hot, add the beef mince and cook for 7-8 min or until crispy, breaking it up with a wooden spoon as you go

Once crispy, crumble in 1/2 [1] beef stock cube and add the ground cumin and cook for 2 min further

Meanwhile, boil a kettle

Grate the cheddar cheese

Cut the lime[s] in half

Combine the natural yoghurt with the chipotle paste (Can't handle the heat? Go easy!) – this is your spicy yoghurt

Transfer the crispy beef to a bowl and set aside 

Drain and rinse the black beans

Return the pan (and oil) to a medium heat

Once hot, add the drained black beanssmoked paprika and chopped garlic and cook for 1-2 min or until fragrant

Meanwhile, dissolve the remaining beef stock cube in 150ml [250ml] boiled water

Add the beef stock and the juice of 1/2 [1] lime and cook for 3-4 min further

Remove the beans from the heat and mash into a semi-smooth paste – these are your refried beans

Combine the juice of the remaining lime with 1 tbsp [2 tbsp] olive oil in a bowl

Season with a pinch of salt and pepper

Add the shredded lettuce and chopped tomato and give it a good mix up
