We've deconstructed a classic BLT and turned it into a delicious warm salad. You'll serve up crispy bacon shards with roasted baby potatoes, avocado, red gem lettuce, shallot rings and juicy cherry tomatoes, all drizzled with a zippy mustard mayo dressing. Yum! (Gluten and dairy-free, suitable for coeliacs).

Cooking Instructions
Instructions for 2 people (double for 4)
1 Warm Bacon, Lettuce, Tomato & Avocado Salad

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Cut the waxy potatoes (skins on) into bite-sized pieces 

 

2 Warm Bacon, Lettuce, Tomato & Avocado Salad

Add the chopped waxy potatoes to a baking tray (use tin foil to avoid mess!)

Drizzle them with olive oil and a generous pinch of salt 

Put the tray in the oven for an initial 10 min 

3 Warm Bacon, Lettuce, Tomato & Avocado Salad

Meanwhile, chop the red gem lettuce[s] in half lengthways 

Shred the bottom half of the gem finely and separate the red leaves, keeping them whole 

Roughly chop the cherry tomatoes 

Peel and finely slice the shallot[s]

4 Warm Bacon, Lettuce, Tomato & Avocado Salad

Cut the avocado[s] in half lengthways, around the stone[s] 

Remove the stone[s] using a teaspoon

Scoop the avocado flesh out of the skin[s] using a spoon

Roughly chop the avocado

5 Warm Bacon, Lettuce, Tomato & Avocado Salad

After an initial 10 min, add the smoked streaky bacon to the tray with the potatoes (use tin foil to avoid mess)

Return the tray to the oven for a further 20-25 min or until the potatoes are cooked through and the bacon is crisp

6 Warm Bacon, Lettuce, Tomato & Avocado Salad

Combine the wholegrain mustard, white wine vinegar and mayonnaise in a small bowl

Add a pinch of salt, a drizzle of olive oil and 1 tbsp [2 tbsp] water – this is your mustard dressing

 

7 Warm Bacon, Lettuce, Tomato & Avocado Salad

Add the red gem, chopped cherry tomatoes, avocadosliced shallot and roasted potatoes to a large bowl 

Add half the mustard dressing 

Give everything a good mix up – this is your dressed salad
