This low-calorie risotto is cooked with sautéed leek, pretty pea shoots and mint. Topped with sweet and smoky candied bacon, a brilliant contrast to the fresh green risotto. The traditional flavours of ham and pea are reborn! Easy, ham and peasy! (Naturally gluten-free, but unsuitable for coeliacs).

Cooking Instructions
Instructions for 2 people (double for 4)
1 Candied Bacon & Pea Shoot Risotto

Preheat the oven to 200°C/ 180°C (fan)/ 350°F/ Gas 4

Boil a kettle 

Cut the leek[s] in half lengthways and wash carefully to remove any grit from between the leaves

Slice the leek[s] finely, discarding the tough tops and root end[s]

2 Candied Bacon & Pea Shoot Risotto

Heat a large, wide-based pan with 1-2 tbsp olive oil and a large knob of butter over a medium heat

Once hot, add the sliced leek and cook for 3-5 min or until it's softened and translucent

Meanwhile, add the smoked streaky bacon to a lightly oiled baking tray (use tin foil to avoid mess!)

Sprinkle the bacon with 2 tsp [4 tsp] sugar 

Put the tray in the oven for 15-20 min or until the bacon is crispy and the sugar has melted – this is your candied bacon

Meanwhile, dissolve the chicken stock cube[s] in 700ml [1.4L] boiled water

Add the arborio rice to the softened leek and cook for 30 sec, stirring to coat the grains in oil 

Add the Shaoxing wine and cook for a further 30 sec or until it has almost evaporated

Add 1/3 of the stock with a pinch of pepper

Once absorbed, continue to add the stock, a little at a time, stirring almost constantly until the stock has absorbed and the rice is cooked

Meanwhile, strip the mint leaves from their stems and chop them finely

Trim and slice the spring onions finely

Once done, carefully chop your candied bacon into bite-sized shards (it doesn't matter if some bits are bigger than others)

Once cooked, remove the risotto from the heat and stir in the chopped spring onionmint and half of the pea shoots, taste for seasoning, adding more salt and pepper if needed

Serve the risotto in bowls and garnish with the candied bacon shardsremaining pea shoots and a drizzle of olive oil
