The creamy sauce is packed with flavour thanks to garlic paste, mushrooms (just tear 'em in!) and speedy pancetta lardons. Topped with plenty of grated cheese and fresh chives, this is one for all the family to enjoy!

Before you begin...

Get all your ingredients and equipment ready

Skim through these steps

Wash your fruit and veg

Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 mins)

2 Ten-Min Bacon & Mushroom Alfredo

Now, let's get started!

Boil a kettle

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium-high heat

Once hot, add the pancetta lardons and cook for 2 min

3 Ten-Min Bacon & Mushroom Alfredo

Add the quick cook spaghetti to a pot of boiled water with a large pinch of salt and bring to the boil over a high heat

Cook the quick cook spaghetti for 3-4 min or until cooked with a slight bite

Once done, drain the quick cook spaghetti, reserving a cup of the starchy pasta water

4 Ten-Min Bacon & Mushroom Alfredo

While the spaghetti is cooking, crumble the chestnut mushrooms into the pan

Add the roasted garlic paste and cook for 30 sec

5 Ten-Min Bacon & Mushroom Alfredo

Add the Chinese rice wine, soft cheese and a generous pinch of salt 

Give everything a good mix up and cook for 2 min further

6 Ten-Min Bacon & Mushroom Alfredo

Meanwhile, snip the chives with scissors

7 Ten-Min Bacon & Mushroom Alfredo

Add the drained spaghetti to the pan with the sauce and give everything a good mix up

Cook for 30 sec further or until the sauce begins to stick to the pasta – this is your pancetta & mushroom alfredo

Tip: Add a splash of the starchy pasta water if your sauce is looking a little dry!
