We\u2019ve put together some healthy alternative breakfasts that are full of flavour but ready in minutes, so you can start the day (and the year) with a spring in your step and time to spare.<\/p>\n<hr \/>\n<p><b>2-Ingredient Banana Pancakes<\/b><br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7249\" src=\"https:\/\/www.gousto.co.uk\/blog\/wp-content\/uploads\/2016\/12\/Gousto-PimpYourBreakfasts_02133-small.jpg\" alt=\"2 ingredient banana pancakes recipe\" width=\"680\" height=\"500\" \/><\/p>\n<p><strong>Ingredients (makes 1 serving):<\/strong><\/p>\n<ul>\n<li>one banana<\/li>\n<li>2 eggs<\/li>\n<li>(optional) frozen berries or 1\/2 a banana<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Mash up a banana, mix it with 2 eggs and pan-fry as you would a pancake.<\/li>\n<\/ol>\n<p>The result is light, flour-free and high in protein. If you\u2019re not an excellent flipper, just cook one half and pop it under the grill to finish &#8211; easy. Add a chopped banana or frozen berries for a little extra colour and flavour if you like!<\/p>\n<hr \/>\n<p><b>Healthy Day Hollandaise\u00a0<\/b><br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7250\" src=\"https:\/\/www.gousto.co.uk\/blog\/wp-content\/uploads\/2016\/12\/Gousto-PimpYourBreakfasts_02136-small.jpg\" alt=\"healthy hollandaise sauce recipe\" width=\"680\" height=\"500\" \/><br \/>\n<strong>Ingredients (makes 1 serving):<\/strong><\/p>\n<ul>\n<li>one egg yolk<\/li>\n<li>100ml Greek yoghurt<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Mix an egg yolk, 100ml Greek yoghurt and a knob of butter in a heatproof bowl over simmering water<\/li>\n<li>Whisk for 5-10 minutes or until thickened, then remove from the heat and season with salt and pepper.<br \/>\n<i>Tip: Pour over poached eggs on toast and garnish with chives for a gourmet healthy breakfast.\u00a0<\/i><\/li>\n<\/ol>\n<hr \/>\n<p><b>Overnight Oats<\/b><br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7251\" src=\"https:\/\/www.gousto.co.uk\/blog\/wp-content\/uploads\/2016\/12\/Gousto-PimpYourBreakfasts_02131_edit-small.jpg\" alt=\"overnight apple soaked oats recipe\" width=\"680\" height=\"500\" \/><\/p>\n<p><strong>Ingredients (makes 1 serving):<\/strong><\/p>\n<ul>\n<li>1 cup jumbo oats<\/li>\n<li>1 cup apple juice<\/li>\n<li>fresh fruit and nuts<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Pour a cup of apple juice over a cup of jumbo oats and leave in the fridge overnight.
