We&#8217;ve even included a recipe for simple (but utterly delicious) buttercream icing to top them off with!<\/p>\n<hr \/>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-6550\" src=\"https:\/\/www.gousto.co.uk\/blog\/wp-content\/uploads\/2016\/10\/Pumpkin-cupcakes-for-Blog-2-of-5.jpg\" alt=\"easy pumpkin cupcakes ingredients\" width=\"1000\" height=\"1000\" \/><\/p>\n<h3><strong>Ingredients:<\/strong><\/h3>\n<p><em>For 12 pumpkin cupcakes<\/em><\/p>\n<ul>\n<li>\n<ul>\n<li>160g all-purpose flour<\/li>\n<li>1 teaspoon allspice<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li>1\/2 teaspoon cinnamon<\/li>\n<li>1\/2 teaspoon bicarbonate of\u00a0soda<\/li>\n<li>1\/4 teaspoon nutmeg<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>250g grated pumpkin<\/li>\n<li>100g cup sugar<\/li>\n<li>60g cup brown sugar, packed<\/li>\n<li>100ml cup vegetable oil<\/li>\n<li>2 large eggs<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<h4><strong>For the\u00a0buttercream icing:<\/strong><\/h4>\n<div><strong>\u00a0<\/strong><\/div>\n<ul>\n<li>1 cup of butter<\/li>\n<li>3 cups icing sugar<\/li>\n<li>2 tablespoons milk<\/li>\n<\/ul>\n<hr \/>\n<h3><strong>Method <\/strong><\/h3>\n<p><em>for the base<\/em><\/p>\n<ol>\n<li><strong>Preheat<\/strong> the oven to 190<strong>\u00b0<\/strong>C\/ 170\u00b0C (fan)\/ 375\u00b0F\/ Gas 5. Line a 12 cup standard cupcake\u00a0tray with cupcake baking cups and set aside<\/li>\n<li><strong>C<\/strong><strong>ombine<\/strong> the flour, allspice, baking powder, cinnamon, bicarbonate of\u00a0soda, nutmeg and salt in a large bowl<\/li>\n<li><strong>Whisk<\/strong> together the grated pumpkin, sugar, vegetable oil and eggs in another bowl<\/li>\n<li><strong>Pour<\/strong>\u00a0the whisked mixture over the dry ingredients and stir using a spatula, until fully mixed<\/li>\n<li><strong>Dollop<\/strong>\u00a0a spoonful of batter evenly into each baking cup in the cupcake\u00a0tray\u00a0until the batter runs out. Place the tray into the hot oven and bake for 15-18 minutes<br \/>\n<em>Tip: Make the buttercream\u00a0icing while you&#8217;re waiting for your cupcakes to bake<\/em><\/li>\n<li><strong>Remove<\/strong> from oven and cool completely on a wire rack before adding the buttermilk\u00a0icing<\/li>\n<\/ol>\n<h3><strong>Method <\/strong><\/h3>\n<p><em>For the buttermilk icing<\/em><\/p>\n<ol>\n<li><strong>Add\u00a0<\/strong>the butter to a bowl and beat\u00a0with an electric mixer until light and peaky<\/li>\n<li><b>Sieve\u00a0<\/b>the icing sugar to remove any lumps, then add a little at a time to the butter while whisking continually, until all the icing sugar has been added. If the mixture begins to become too thick, add the milk a teaspoon at a time to loosen it up until the desired texture has been reached<\/li>\n<li><b>Add\u00a0<\/b>scoops of buttercream to the top of each pumpkin cupcake (you can smooth the tops with a spatula if desired)<\/li>\n<\/ol>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-6552\" src=\"https:\/\/www.gousto.co.uk\/blog\/wp-content\/uploads\/2016\/10\/Pumpkin-cupcakes-for-Blog-1-of-1.jpg\" alt=\"easy pumpkin cupcakes buttermilk icing\" width=\"1000\" height=\"668\" \/><\/p>\n<hr \/>\n<p>And that&#8217;s it!
