{"id":5993,"date":"2020-03-08T14:54:05","date_gmt":"2020-03-08T14:54:05","guid":{"rendered":"https:\/\/www.gousto.co.uk\/blog\/?p=5993"},"modified":"2020-04-23T11:26:34","modified_gmt":"2020-04-23T10:26:34","slug":"easy-banana-bread-recipe","status":"publish","type":"post","link":"https:\/\/www.gousto.co.uk\/blog\/easy-banana-bread-recipe","title":{"rendered":"Super Easy Banana Bread Recipe"},"content":{"rendered":"<div class=\"wpb-content-wrapper\"><p>[vc_row][vc_column][vc_column_text]There are many \u2018secrets\u2019 out there for the perfect banana bread, but we believe in the most simple; super ripe bananas.\u00a0 You want to leave them until the skin is dark yellow, covered in brown spots and soft when peeled.<\/p>\n<p>This will give you the sweetest most flavorful banana bread which there just isn\u2019t a substitute for. \u00a0 Luckily banana\u2019s freeze (peeled) very well so you can keep a stash in your freezer ready for when you fancy whipping up this sweet treat.<\/p>\n<p>A note on substitutions &#8211; we\u2019ve included more substitutions that usual for this recipe so you can use up what is in your cupboards.<\/p>\n<h3><b>Ingredients:<\/b><\/h3>\n<ul>\n<li>285g plain flour<\/li>\n<li>1 tsp bicarbonate of soda<\/li>\n<li>1\/4 tsp salt <i>&#8211; omit if using salted butter<\/i><\/li>\n<li>110g butter + extra for greasing the dish &#8211;\u00a0 <i>OR coconut oil OR 80ml flavour free vegetable oil OR olive oil<\/i><\/li>\n<li>225g light brown sugar &#8211; <i>\u00a0OR caster sugar (optional &#8211; try adding 1 tsp treacle to white caster sugar for a more caramelly flavour) OR a mix of the two\u00a0<\/i><\/li>\n<li>2 medium eggs<\/li>\n<li>4 ripe bananas &#8211; mashed<\/li>\n<li>85ml buttermilk &#8211; <i>OR 4 tbsp yoghurt mixed with 25ml milk &#8211; or 80ml milk + 1tsp white vinegar\/lemon juice<\/i><\/li>\n<li>1 tsp vanilla extract &#8211; <i>optional<\/i><\/li>\n<\/ul>\n<h3><b>Method:<\/b><\/h3>\n<ol>\n<li>Preheat the oven to 180C\/160C Fan\/Gas Mark\u00a0 and grease and line your loaf tin (roughly 20cm x 12.5cm). Sift the flour with soda and salt into a large bowl. In a separate bowl, cream the butter and sugar until light and fluffy (if using oil mix until well combined).<\/li>\n<li>Add the eggs, mashed bananas, buttermilk and vanilla into the butter\/sugar mixture and mix well. Gently fold in the flour mixture.<\/li>\n<li>and pour your cake mixture in. Bake in the middle of the oven for 75 minutes until well risen and golden brown, and if you poke it with a knife or skewer it comes out clean. Avoid overbaking it as that will lose the moisture!\u00a0 Leave to rest 30 minutes before removing from the tin.<\/li>\n<\/ol>\n<p>And there you have it! The\u00a0 BEST banana bread EVER. If you can muster the necesssary self-control you can slice it up once it cools and pop it into the freezer.
