It\u2019s breakfast for dinner, the Gousto way.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-17750\" src=\"https:\/\/gousto.gurucloud.co.uk\/wp-content\/uploads\/2023\/08\/4527-Cheesy-Sausage-Egg-Sandwich-With-Crispy-Potatoes0053-1664183525941.jpg\" alt=\"\" width=\"2048\" height=\"2048\" \/><\/p>\n<h2>Ingredients<\/h2>\n<p>For 2 people [double for 4]<\/p>\n<ul>\n<li>1 red onion<\/li>\n<li>1 tomato<\/li>\n<li>1 gem lettuce<\/li>\n<li>2 British free-range eggs<\/li>\n<li>1 garlic clove<\/li>\n<li>3 white potatoes<\/li>\n<li>1 tsp ground smoked paprika<\/li>\n<li>2 ciabattas<\/li>\n<li>135g Jolly Good smoked streaky bacon<\/li>\n<li>30g lighter cheese<\/li>\n<li>40g red chilli relish<\/li>\n<\/ul>\n<p>You\u2019ll also need<\/p>\n<ul>\n<li>Butter, olive oil, pepper, salt, sugar, vegetable oil<\/li>\n<\/ul>\n<h2>Cooking instructions 35 mins<\/h2>\n<p>For 2 people [double for 4]<\/p>\n<p><strong>Step 1<\/strong><\/p>\n<p>Preheat the oven to 200\u00baC \/ 180\u00baC (fan) \/ gas 6. Cut the potatoes (skins on) into small bite-sized pieces. Peel and finely slice the red onion[s]. Peel and finely chop (or grate) the garlic.<\/p>\n<p><strong>Step 2<\/strong><\/p>\n<p>Add the chopped potatoes to a baking tray with the chopped garlic, ground smoked paprika and a drizzle of vegetable oil. Season with a pinch of salt and give everything a good mix up and put the tray in the oven for an initial 25 min or until the potatoes are golden.<\/p>\n<p><strong>Step 3<\/strong><\/p>\n<p>Heat a large, wide-based pan (preferably non-stick with a matching lid) with a knob of butter over a medium heat. Once hot, add the sliced onion with a pinch of salt and sugar and cook for 8-9 min or until softened and caramelised. Once softened, transfer the caramelised onion to a small bowl, reserving the pan, with the chilli relish and 1 tsp [2 tsp] cold water \u2013 this is your sweet onion chilli relish.<\/p>\n<p><strong>Step 4<\/strong><\/p>\n<p>While the onion is cooking, add the smoked streaky bacon to a separate baking tray (use tin foil to avoid mess!) and put the tray in the oven for 10-15 min or until golden and crispy. Dice the tomato[es] and wash the gem lettuce, then pat it dry with kitchen paper and shred finely.<\/p>\n<p><strong>Step 5<\/strong><\/p>\n<p>Add the shredded lettuce and diced tomato to a medium bowl with a drizzle of olive oil and a pinch of salt and pepper \u2013 this is your tomato salad. Grate the lighter cheese and slice the ciabattas in half.<\/p>\n<p><strong>Step 6<\/strong><\/p>\n<p>Once the potatoes have been cooking for 25 min, move them to one side and add the sliced ciabatta to the other side of the baking tray. Tip: Cooking for 4? Use 2 trays! Top the ciabatta bases with the grated cheese and put the tray[s] in the oven for a final 5 min or until the ciabattas are crusty and the cheese has melted.<\/p>\n<p><strong>Step 7<\/strong><\/p>\n<p>Return the reserved pan to a medium-high heat with a drizzle of vegetable oil. Once hot, crack the eggs into the pan and cook, covered, for 2-3 min or until done to your liking. Tip: Give your eggs a little shake before you crack for perfectly centred yolks!<\/p>\n<p><strong>Step 8<\/strong><\/p>\n<p>To build, add a dollop of sweet onion chilli relish to your cheesy ciabatta base and top with crispy bacon, a fried egg and a ciabatta lid \u2013 this is your cheesy bacon &amp; egg sandwich. Serve with the crispy spiced potatoes and top with a dollop of remaining sweet onion chilli relish. Serve the tomato salad to the side.
