This one&#8217;s a cult classic.<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-17730\" src=\"https:\/\/gousto.gurucloud.co.uk\/wp-content\/uploads\/2023\/08\/390_Chipotle-Burger-With-Caramelised-Onions-3262-1611855755184-x700.jpg\" alt=\"\" width=\"700\" height=\"700\" \/><\/p>\n<h2>Ingredients<\/h2>\n<p>For 2 people [double for 4]<\/p>\n<ul>\n<li>2 butter brioche buns<\/li>\n<li>20g chipotle paste<\/li>\n<li>250g British lean beef mince (&lt;5% fat)<\/li>\n<li>3 white potatoes<\/li>\n<li>50ml mayonnaise<\/li>\n<li>1 gem lettuce<\/li>\n<li>2 red onions<\/li>\n<\/ul>\n<p>You\u2019ll also need<\/p>\n<ul>\n<li>Olive oil, pepper, salt, sugar, vegetable oil<\/li>\n<\/ul>\n<h2>Cooking instructions 35 mins<\/h2>\n<p>For 2 people [double for 4]<\/p>\n<p><strong>Step 1<\/strong><\/p>\n<p>Preheat the oven to 220\u00b0C \/ 200\u00b0C (fan) \/ gas 7. Cut the potatoes (skins on) into chips. Add the chips to a baking tray with a drizzle of vegetable oil and a pinch of salt and pepper. Give everything a good mix up and put the tray in the oven for 20-25 min or until golden and crisp.<\/p>\n<p><strong>Step 2<\/strong><\/p>\n<p>While the chips are cooking, peel and finely slice the red onions. Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium heat. Once hot, add the sliced red onions with a pinch of salt and sugar. Reduce the heat to very low and cook the onions, stirring frequently, until ready to serve or until they have softened and caramelised.<\/p>\n<p><strong>Step 3<\/strong><\/p>\n<p>Meanwhile, season the lean beef mince with a generous pinch of salt and pepper. Massage the meat with clean hands for 1 min (this helps them to hold their shape whilst cooking). Divide the mince into 2 [4], shape them into patties and refrigerate until later.<\/p>\n<p><strong>Step 4<\/strong><\/p>\n<p>Slice the brioche buns in half. Heat a separate, large, dry, wide-based pan (preferably non-stick) over a medium heat and add the brioche halves, cut-side down, and cook for 2-3 min or until toasted (save the pan).<\/p>\n<p><strong>Step 5<\/strong><\/p>\n<p>Combine the mayo with the chipotle paste (can&#8217;t handle the heat? Go easy!) in a small bowl and season with salt and pepper \u2013 this is your chipotle mayo.<\/p>\n<p><strong>Step 6<\/strong><\/p>\n<p>Wash the gem lettuce, then pat it dry with kitchen paper. Remove 2 [4] outer lettuce leaves and set them aside for serving. Tear the remaining lettuce into bite-sized pieces. Add the torn lettuce leaves to a bowl and mix with a drizzle of olive oil and season lightly with salt and pepper \u2013 this is your crisp lettuce salad.<\/p>\n<p><strong>Step 7<\/strong><\/p>\n<p>Return the reserved pan to a medium heat with a drizzle of vegetable oil. Once hot, add the lean beef burger patties and cook them for 4-5 min on each side or until they&#8217;re cooked through.<\/p>\n<p>Tip: Keep pressing the patties down with a spatula to keep them flat<\/p>\n<p><strong>Step 8<\/strong><\/p>\n<p>To assemble, top each toasted brioche base with a reserved lettuce leaf, a generous dollop of the chipotle mayo, a lean beef burger patty, caramelised onions and a toasted brioche lid \u2013 this is your chipotle lean beef burger with caramelised onions. Serve any remaining chipotle mayo with the chips and crisp lettuce salad to the side.
