Punchy lime-soy dressing, zesty carrot and ginger<\/span><span class=\"ExpandingText_chunk-1__24wed\">\u00a0rice, tomatoes and crispy fried onions to fi<\/span><span class=\"ExpandingText_chunk-2__2zef4\">nish \u2013 you&#8217;d be crazy not to love it.<\/span><\/p>\n<h2><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-17721\" src=\"https:\/\/gousto.gurucloud.co.uk\/wp-content\/uploads\/2023\/08\/3873_Hainanese-Chicken-1634721803520-x700.jpg\" alt=\"\" width=\"700\" height=\"700\" \/>Ingredients<\/h2>\n<p>For 2 people [double for 4]<\/p>\n<ul>\n<li>130g white long grain rice<\/li>\n<li>2 British chicken breast portions<\/li>\n<li>5.5g chicken stock mix<\/li>\n<li>15ml Chinese rice wine<\/li>\n<li>1\/2 cucumber<\/li>\n<li>15g fresh root ginger<\/li>\n<li>3 spring onions<\/li>\n<li>1 lime<\/li>\n<li>15g crispy onions<\/li>\n<li>30ml soy sauce<\/li>\n<li>1 carrot<\/li>\n<li>1 garlic clove<\/li>\n<li>10g coriander<\/li>\n<li>1 tomato<\/li>\n<\/ul>\n<p>You\u2019ll also need<\/p>\n<ul>\n<li>Vegetable oil, sugar<\/li>\n<\/ul>\n<h2>Cooking instructions 40 mins<\/h2>\n<p>For 2 people [double for 4]<\/p>\n<p><strong>Step 1<\/strong><\/p>\n<p>Preheat the oven to 220\u00b0C \/ 200\u00b0C (fan) \/ gas 7. Take your chicken out of the fridge, open the packet and let it air. Boil half a kettle.Top, tail, peel and grate the carrot[s]. Peel (scrape the skin off with a teaspoon) and finely chop (or grate) half the ginger.<\/p>\n<p><strong>Step 2<\/strong><\/p>\n<p>Rinse the white long grain rice until the water runs clear, then add to an oven-proof dish with the grated carrot, chopped ginger, chicken stock mix and 225ml [450ml] boiled water. Give everything a good mix up, cover tightly with tin foil and put the dish in the oven for 30 min or until all the water is absorbed and the rice is cooked \u2013 this is your zesty carrot &amp; ginger rice. Once cooked, remove from the oven and keep covered until serving.<\/p>\n<p><strong>Step 3<\/strong><\/p>\n<p>While the rice is cooking, trim, then roughly chop 1 [2] spring onion[s]. Roughly chop the remaining ginger.<\/p>\n<p><strong>Step 4<\/strong><\/p>\n<p>Add the chicken breast portions to a medium sized pot (with a matching lid) with the chopped spring onion and remaining chopped ginger. Add 500ml [1L] cold water to the pot and bring to the boil, with the lid on, over a high heat. Once boiling, reduce the heat to low and simmer for 10-15 min (turning the chicken half way) or until the chicken is cooked through (no pink meat!), then drain \u2013 this is your Hainanese-style chicken.<\/p>\n<p><strong>Step 5<\/strong><\/p>\n<p>Slice the cucumber into discs. Chop the tomato[es] in half, then slice finely.<\/p>\n<p><strong>Step 6<\/strong><\/p>\n<p>Trim, then slice the remaining spring onions. Peel and finely chop (or grate) the garlic. Chop the coriander finely, including the stalks. Roll the lime[s] with your hand on a hard surface (to release more juice) and cut in half.<\/p>\n<p><strong>Step 7<\/strong><\/p>\n<p>Heat a large, wide-based pan (preferably non-stick) over a low heat with a drizzle of vegetable oil. Add the\u00a0soy sauce,\u00a0Chinese rice wine,\u00a0sliced spring onion,\u00a0chopped garlic\u00a0and\u00a0chopped coriander\u00a0with the\u00a0juice\u00a0of 1\/2\u00a0<span class=\"text-danger\">[1]<\/span>\u00a0lime\u00a0and 1 tsp\u00a0<span class=\"text-danger\">[2 tsp]<\/span> sugar\u00a0and cook for 1-2 min or until warmed through\u00a0\u2013\u00a0this is your\u00a0fragrant lime dressing.<\/p>\n<p><strong>Step 8<\/strong><\/p>\n<p>Cut the remaining lime into wedges. Slice the Hainanese-style chicken and serve it over the sliced tomato and cucumber discs with the zesty carrot &amp; ginger rice to the side. Drizzle the fragrant lime dressing over the chicken, then garnish with a lime wedge and the crispy onions.
