Put a large baking tray (or two) in the oven to heat up (this will stop the pizza bottoms from going soggy!) Add the dried yeast to a large bowl with 100ml [200ml] warm water and 1 tsp [2 tsp] sugar. Give it a good mix up and set aside for 5-10 min for the yeast to develop.<\/p>\n<p><strong>Step 2<\/strong><\/p>\n<div data-block=\"true\" data-editor=\"ae2ou\" data-offset-key=\"2360m-0-0\">\n<div class=\"public-DraftStyleDefault-block public-DraftStyleDefault-ltr\" data-offset-key=\"2360m-0-0\"><span data-offset-key=\"2360m-0-0\">Meanwhile, peel and grate (don&#8217;t chop!) the <\/span><span data-offset-key=\"2360m-0-1\">garlic. <\/span><span data-offset-key=\"65k4c-0-0\">Combine the <\/span><span data-offset-key=\"65k4c-0-1\">tomato paste<\/span><span data-offset-key=\"65k4c-0-2\">, <\/span><span data-offset-key=\"65k4c-0-3\">half<\/span><span data-offset-key=\"65k4c-0-4\"> the <\/span><span data-offset-key=\"65k4c-0-5\">dried oregano <\/span><span data-offset-key=\"65k4c-0-6\">and<\/span> <span data-offset-key=\"65k4c-0-8\">3\/4 of the <\/span><span data-offset-key=\"65k4c-0-9\">grated garlic<\/span><span data-offset-key=\"65k4c-0-10\"> (you&#8217;ll use the rest later!) in a small bowl with a pinch of <\/span><span data-offset-key=\"65k4c-0-11\">salt<\/span><span data-offset-key=\"65k4c-0-12\">, 1 tbsp <\/span><span data-offset-key=\"65k4c-0-13\">[2 tbsp] <\/span><span data-offset-key=\"65k4c-0-14\">cold water<\/span><span data-offset-key=\"65k4c-0-15\"> and a drizzle of <\/span><span data-offset-key=\"65k4c-0-16\">olive oil<\/span><span data-offset-key=\"65k4c-0-17\"> \u2013 this is your <\/span><span data-offset-key=\"65k4c-0-18\">tomato sauce.<\/span><\/div>\n<\/div>\n<div data-block=\"true\" data-editor=\"ae2ou\" data-offset-key=\"au3s7-0-0\">\n<div data-offset-key=\"au3s7-0-0\"><\/div>\n<\/div>\n<p><strong>Step 3<\/strong><\/p>\n<p><span data-offset-key=\"au3s7-0-0\">Drain the <\/span><span data-offset-key=\"au3s7-0-1\">mozzarella<\/span><span data-offset-key=\"au3s7-0-2\">, pat and squeeze as much liquid out as you can with kitchen paper and tear into small bite-sized pieces.<\/span><\/p>\n<p><strong>Step 4<\/strong><\/p>\n<p>Add the pizza base mix and a pinch of salt to the bowl with the yeast. Gradually add up to 75ml [150ml] warm water (you may not need all of it), a little at a time, and gently mix with a plastic spatula until a sticky dough ball has formed. Tip the dough out onto a floured work surface and cut into 2 [4]. Toss each dough ball in a light dusting of flour until coated, rounding the ball as you go (no need to knead!)<\/p>\n<p><strong>Step 5<\/strong><\/p>\n<div data-block=\"true\" data-editor=\"5cqr6\" data-offset-key=\"5qu2i-0-0\">\n<div class=\"public-DraftStyleDefault-block public-DraftStyleDefault-ltr\" data-offset-key=\"5qu2i-0-0\"><span data-offset-key=\"5qu2i-0-0\">Roll out each <\/span><span data-offset-key=\"5qu2i-0-1\">dough ball<\/span><span data-offset-key=\"5qu2i-0-2\"> into a circle disc the size of a dinner plate with a <\/span><span data-offset-key=\"5qu2i-0-3\">rolling pin <\/span><span data-offset-key=\"5qu2i-0-4\">\u2013 these are your<\/span><span data-offset-key=\"5qu2i-0-5\"> pizza bases.\u00a0<\/span><\/div>\n<div data-offset-key=\"5qu2i-0-0\"><\/div>\n<\/div>\n<div data-block=\"true\" data-editor=\"5cqr6\" data-offset-key=\"c2i57-0-0\">\n<div class=\"public-DraftStyleDefault-block public-DraftStyleDefault-ltr\" data-offset-key=\"c2i57-0-0\"><span data-offset-key=\"c2i57-0-0\">Tip: Dust with extra sprinkles of flour as you go to stop it sticking!<\/span><\/div>\n<\/div>\n<div data-block=\"true\" data-editor=\"5cqr6\" data-offset-key=\"au2uk-0-0\">\n<div data-offset-key=\"au2uk-0-0\"><\/div>\n<\/div>\n<p><strong>Step 6<\/strong><\/p>\n<p><span data-offset-key=\"76mk3-0-0\">Dot 1\/4 [1\/8] torn mozzarella (save the rest for later!) evenly around the edge of each pizza base. Roll the edge of the dough over the mozzarella and press to seal, forming a thick crust \u2013 these are your <\/span><span data-offset-key=\"76mk3-0-1\">stuffed crust pizza bases.<\/span><\/p>\n<p><strong>Step 7<\/strong><\/p>\n<p>Remove the heated tray[s] from the oven and slide the stuffed crust pizza bases onto the tray[s]. Add the tomato sauce onto each pizza and spread it evenly with the back of a spoon (be careful of the hot pan!) Top them evenly with the remaining torn mozzarella and put the tray[s] in the oven for 12-15 min or until the cheese has melted and the crust has puffed up and browned \u2013 these are your pizzas.<\/p>\n<p><strong>Step 8<\/strong><\/p>\n<p>Grate the Italian hard cheese. While the pizzas are cooking, wash the rocket then pat it dry with kitchen paper. Add the rocket to a large bowl with the balsamic vinegar, half the grated Italian hard cheese and a small drizzle of olive oil \u2013 this is your rocket salad.<\/p>\n<p>Add the mayo to a small bowl with the remaining oregano, remaining grated garlic and 1 tsp [2 tsp] cold water \u2013 this is your herby mayo.<\/p>\n<p><strong>Step 8<\/strong><\/p>\n<div data-block=\"true\" data-editor=\"8t03h\" data-offset-key=\"fkm06-0-0\">\n<div class=\"public-DraftStyleDefault-block public-DraftStyleDefault-ltr\" data-offset-key=\"fkm06-0-0\"><span data-offset-key=\"fkm06-0-0\">Sprinkle the <\/span><span data-offset-key=\"fkm06-0-1\">remaining grated Italian hard cheese<\/span><span data-offset-key=\"fkm06-0-2\"> over the <\/span><span data-offset-key=\"fkm06-0-3\">pizza<\/span><span data-offset-key=\"fkm06-0-4\"> and pick over the <\/span><span data-offset-key=\"fkm06-0-5\">basil leaves<\/span><span data-offset-key=\"fkm06-0-6\">, discarding the stems<\/span> <span data-offset-key=\"fkm06-0-8\">\u2013 this is your <\/span><span data-offset-key=\"fkm06-0-9\">margarita stuffed crust pizza. <\/span><span data-offset-key=\"3hprk-0-0\">Serve the <\/span><span data-offset-key=\"3hprk-0-1\">margarita stuffed crust pizza <\/span><span data-offset-key=\"3hprk-0-2\">with the<\/span><span data-offset-key=\"3hprk-0-3\"> herby mayo <\/span><span data-offset-key=\"3hprk-0-4\">and <\/span><span data-offset-key=\"3hprk-0-5\">rocket salad <\/span><span data-offset-key=\"3hprk-0-6\">to the side. <\/span>Enjoy!<\/div>\n<\/div>\n<div data-offset-key=\"5qh45-0-0\"><\/div>\n<div data-offset-key=\"5qh45-0-0\"><a href=\"https:\/\/www.gousto.co.uk\/cookbook\/recipes\/diy-margarita-stuffed-crust-pizza-with-herby-mayo\">Nutritional and allergen information<\/a><\/div>\n<div data-offset-key=\"5qh45-0-0\"><\/div>\n","protected":false},"excerpt":{"rendered":"<p>Saturday Night Fever (1977), John Travolta eats a double slice of pizza at Lenny&#8217;s.
