Traditionally baked with a variety of heady spices, the star of the show was always Jamaican ginger, famous for being the fieriest, most fragrant variety in the world.<\/p>\n
Whip up our take on this tea-time classic with a selection of pantry staples. You might not be able to get your hands on Jamaican ginger, but fear not, a hefty spoonful of dried spice will do the trick. Finish it all off with a drizzle of citrusy icing and a sprinkle of lime zest to really make your spices sing.<\/p>\n
Serves<\/strong> 8 – 10<\/p>\n Total time<\/strong> 1 \u00bd hour<\/p>\n <\/p>\n 175g flour<\/p>\n 75g golden syrup<\/p>\n 75g black treacle<\/p>\n 75g brown sugar<\/p>\n 75g butter<\/p>\n 1 tbsp ground ginger<\/p>\n 1 tsp ground cinnamon<\/p>\n 1 tsp ground nutmeg<\/p>\n 1\/4 tsp ground black pepper<\/p>\n 1 tsp bicarbonate soda<\/p>\n 1 tsp salt<\/p>\n <\/p>\n Lime icing<\/strong><\/p>\n 100g icing sugar<\/p>\n 1 lime (juice & zest)<\/p>\n <\/p>\n Step 1 <\/b>Preheat your oven to 180\u00b0C\/160\u00b0C fan.<\/p>\n <\/p>\n Step 2 <\/b>In a large bowl sieve the flour, spices and bicarbonate of soda.<\/p>\n <\/p>\n Step 3 <\/b>Add your butter, salt, syrups, sugar and 50 ml of water into a large saucepan. Heat the mixture over medium heat until the butter has melted and the sugar dissolved.<\/p>\n <\/p>\n Step 4<\/b> Pour over your spiced flour and mix well. Add your eggs and mix again.<\/p>\n <\/p>\n Step 5 <\/b>Line a cake tin with greaseproof paper. Pour your mix into the tin and bake for 45 minutes.<\/p>\n <\/p>\n Step 6 <\/b>While your cake is baking, make your icing. In a small bowl, add your icing sugar, lime juice and a few teaspoons of water. Mix until you have a thickened icing that\u2019s easy to pour.<\/p>\n <\/p>\n Step 7<\/b> Remove your cake from the oven and leave it to cool on a cooling rack.<\/p>\n <\/p>\n Step 8<\/b> Drizzle over the icing and sprinkle with the zest of your lime.<\/p>\n <\/p>\n Dinner, but not as you know it.
