[vc_row][vc_column][vc_column_text]If you’ve ever wondered what to do with a tin of peaches, cook up this lighter twist on the classic cobbler using your pantry staples.\u00a0<\/span><\/p>\n

The classic Southern peach cobbler is the ultimate make-do-and-mend kind of dessert and heavens to Betsy, I\u2019m here for it. A good cobbler has everything I want in a good pud. A sweet ‘n’ tangy fruity filling, a crispy, crumbly golden topping and a dollop of ice cream for the perfect spoonful.\u00a0<\/span><\/p>\n

The best thing about this humble recipe is how easily it\u2019s thrown together. Centuries ago when American settlers had a fixin\u2019 for peach pie, the cobbler was <\/span>literally<\/span><\/i> cobbled together with what they could find in the cupboard. Preserved peaches were available year-round and made for the perfect sweet treat. Especially when it’s topped with a wholesome, deliciously healthy topping. No pastry? No problem.<\/span><\/p>\n

Recipe:<\/b><\/p>\n

Serves 4<\/span><\/p>\n

Prep time: 10 mins<\/span><\/p>\n

Total time: 40 mins<\/span><\/p>\n

1 tin of peaches (425g) or 6 fresh<\/span><\/p>\n

2 oranges<\/span><\/p>\n

1 tsp vanilla essence\u00a0<\/span><\/p>\n

2 tbsp maple syrup<\/span><\/p>\n

100g almond flour<\/span><\/p>\n

100g oats<\/span><\/p>\n

3 tbsp brown sugar<\/span><\/p>\n

\u00bd tsp ground cinnamon\u00a0<\/span><\/p>\n

5 tbsp coconut oil\u00a0<\/span><\/p>\n

Ice cream to serve<\/span><\/p>\n

Step 1:<\/b> Preheat oven to 200 \u00baC \/ 180\u00baC fan \/ gas mark 6.<\/span><\/p>\n

Step 2: <\/b>Drain your tinned peach slices or, if you\u2019re using fresh, remove the stone and slice them up.<\/span><\/p>\n

Step 3:<\/b> Add them to an oven safe dish along with the zest and juice of the orange, vanilla essence and maple syrup. Give everything a good mix.<\/span><\/p>\n

Step 4: <\/b>In a separate bowl, combine almond flour, oats, cinnamon, brown sugar and coconut oil. Use your hands to rub the ingredients together to create a loose crumble and top the peaches with the mixture.<\/span><\/p>\n

Step 5: <\/b>Bake in the oven for 25 – 30 minutes until the topping is golden and the peaches are bubbling hot.\u00a0<\/span><\/p>\n

Step 6:<\/b> Serve with generous dollop of vanilla ice cream.\u00a0<\/span><\/p>\n
