Was Frida the nation\u2019s original foodie?<\/p>\n

Authentically-prepared dishes were the stars of her table, and her fiestas were an expression of love, both for her family and for the Mexican kitchen. Every occasion was worth celebrating, and holidays from Christmas to Cinco de Mayo were always marked with a proper family feast.<\/p>\n

Frida\u2019s Red Snapper Veracruz<\/em> from the book Frida’s Fiestas<\/em><\/a> is one mouthwatering example of her showstoppers: whole fresh fish, dressed with a vibrant, herby salsa that combines ancient cooking techniques with the influential flavours of the Spanish world.<\/p>\n

Ingredients<\/b><\/p>\n

1 red snapper<\/p>\n

6 medium tomatoes<\/p>\n

20 green olives<\/p>\n

2 tbsp capers<\/p>\n

1 tbsp oregano<\/p>\n

5 bay leaves<\/p>\n

3 thyme sprigs<\/p>\n

5 garlic cloves<\/p>\n

2 large onions<\/p>\n

8 mild green chillies<\/p>\n

200ml olive oil<\/p>\n

1 lime<\/p>\n

Salt and pepper, to taste<\/p>\n

Step 1: <\/b>Preheat oven to 200 \u00baC \/ 180\u00baC fan \/ gas mark 6<\/p>\n

Step 2: <\/b>Slice the tomatoes, olives, garlic cloves, onions and green chillies. Rinse the capers if they are too salty.<\/p>\n

Step 3: <\/b>Pat the red snapper dry and season generously with salt and pepper. Lay the fish in a large baking dish.<\/p>\n

Step 4: <\/b>Dress the fish with the remaining ingredients and drizzle with olive oil.<\/p>\n

Step 5:<\/b> Bake for 40 minutes or until the red snapper is cooked through. Baste 3 times while the fish is baking.<\/p>\n

Step 6: <\/b>Serve hot with a generous squeeze of fresh lime. \u00a1Buen provecho!<\/p>\n
