Serve with saffron rice and fresh basil.<\/p>\n<h2>Ingredients for 2 People [Double for 4 people]<\/h2>\n<ul>\n<li>1 Red Onion<\/li>\n<li>1 Aubergine<\/li>\n<li>0.1g Saffron<\/li>\n<li>1 tsp Dried Oregano<\/li>\n<li>1 tsp Dried Basil<\/li>\n<li>5g Basil<\/li>\n<li>15 ml Balsamic Vinegar<\/li>\n<li>150g Portobello Mushrooms<\/li>\n<li>32g Tomato Paste<\/li>\n<li>210g Can of Finely Chopped Tomatoes<\/li>\n<li>100g Basmati Rice<\/li>\n<li>160g Butternut Squash Cubes<\/li>\n<li>11g Vegetable Stock Mix<\/li>\n<li>Customer Added Ingredients: olive oil, sugar, salt &amp; pepper<\/li>\n<\/ul>\n<h2>Instructions for 2 [for 4]<\/h2>\n<p>Step 1:<\/p>\n<p><b>Before you begin&#8230;<\/b><\/p>\n<p>This recipe takes around 5 min [10 min] to prep, so get your slow cooker and all your ingredients ready, then wash your fruit and veg<\/p>\n<p>Step 2:<\/p>\n<p>Boil a kettle<\/p>\n<p>Heat a large, wide-based pan with a drizzle of <b>olive oil<\/b> over high heat<\/p>\n<p>Trim the green stalks off the<b> aubergine<\/b><b>[s]<\/b> and discard the stalks, then chop the <b>trimmed<\/b> <b>aubergine<\/b><b>[s]<\/b> into bite-sized pieces<\/p>\n<p>Peel and chop the <b>red onion<\/b><b>[s]<\/b> into wedges<\/p>\n<p>Add the <b>chopped aubergine<\/b> and<b> onion wedges<\/b> to the pan<\/p>\n<p>Step 3:<\/p>\n<p>Chop the <b>portobello mushrooms <\/b>into bite-sized chunks<\/p>\n<p>Add the <b>mushroom chunks<\/b> and <b>butternut squash cubes<\/b> to the pan and season generously with<b> salt <\/b>and<b> pepper<\/b><\/p>\n<p>Cook for 2-3 min or until very lightly browned<\/p>\n<p>Step 4:<\/p>\n<p>Add the contents of your pan to the <b>slow cooker\u00a0<\/b><\/p>\n<p>Add 150ml [250ml] <b>boiled water<\/b>, the <b>vegetable stock mix<\/b>, <b>tomato<\/b> <b>paste<\/b>,<b> balsamic vinegar<\/b>, <b>chopped tomatoes<\/b>, <b>dried oregano<\/b>, <b>dried basil<\/b> and 1 tsp [2 tsp]<b> sugar\u00a0<\/b><\/p>\n<p>Cover and cook on high for 4 hours<\/p>\n<p>Step 5:<\/p>\n<p>After 3.5 hours, preheat the oven to 220\u00b0C\/ 200\u00b0C (fan) \/ gas 7<\/p>\n<p>Reboil half a kettle<\/p>\n<p>&nbsp;<\/p>\n<p>Step 6:<\/p>\n<p>Add the <b>basmati rice <\/b>to an <b>oven-proof dish <\/b>with the <b>saffron<\/b>, a generous pinch of <b>salt<\/b> and 250ml [500ml] <b>boiled water <\/b>and give everything a good mix up<\/p>\n<p>Cover tightly with<b> tin foil <\/b>and put the dish in the oven for 25-30 min or until all the water is absorbed and the rice is cooked<\/p>\n<p>Step 7:<\/p>\n<p>Use this time to clear up, set the table, have a cup of tea or simply chill!<\/p>\n<p>Step 8:<\/p>\n<p>To serve, taste the <b>autumn ratatouille<\/b> for seasoning, adding more <b>salt<\/b> and <b>pepper<\/b> if needed<\/p>\n<p>Set the <b>autumn ratatouille<\/b> in the centre of the table, ready to share<\/p>\n<p>Tear the <b>basil leaves <\/b>all over the top and serve the <b>saffron rice<\/b> to the side<\/p>\n<p>Let everyone dig in![\/vc_column_text][\/vc_column][\/vc_row]<\/p>\n<\/div>","protected":false},"excerpt":{"rendered":"<p>[vc_row][vc_column][vc_column_text]This bowl is full of soul and comes together in a snap.
