Like a lot of you, I\u2019ll be shouting \u201cOUT\u201d at my TV and over-indulging on Pimm\u2019s, because Wimbledon is kind of my jam. And you can\u2019t experience this very British occasion without a very British Eton Mess.<\/p>\n

Stuffed silly with strawberries and raspberries, these fruity puds are perfectly portioned for the lounge or al fresco. So whether it\u2019s a tennis-themed garden party, or you\u2019re watching it telly-side, sweeten up your summer with a marvelous mess.<\/p>\n

Ingredients<\/h2>\n

Cooking time: 20 minutes<\/p>\n

300g strawberries and\/or raspberries<\/p>\n

1 tsp icing sugar<\/p>\n

1 tsp vanilla bean paste<\/p>\n

300 ml double cream<\/p>\n

4 mini meringues<\/p>\n

A few basil leaves<\/p>\n

4 jars with lids<\/p>\n

A food processor<\/p>\n

Step 1: Whip your cream until soft peaks form, then fold in the vanilla bean paste.<\/p>\n

Step 2: In a food processor, blitz \u00bd your fruit with 1 tsp icing sugar. Once it’s a smooth puree, add half your cream and fold through gently \u2013 this is your mousse.<\/p>\n

Step 3: Chop any of the larger remaining fruit into bite sized pieces.<\/p>\n

Step 4: Now it’s time to assemble your jars. First, put the fruit in a layer at the bottom, then add a dollop of mousse. Add the cream, before sprinkling with crumbled meringue and a few basil leaves.<\/p>\n

Step 5: Screw on the lids and keep the desserts in the fridge until you’re ready to eat or take on your picnic. Before eating, shake your jar so that your Eton layers become your Eton mess.<\/p>\n
