[vc_row][vc_column][vc_column_text]From heaping bowls of banana pudding, to a jellified Pepsi Cola salad, The King of Rock ‘N’ Roll had questionable tastes when it came to food.<\/p>\n

The most famous of all was the Elvis Special: A peanut butter and banana sandwich, fried ’til golden brown in pure bacon grease. It may sound unhealthy, but sources (me) confirm it tastes incredible<\/i>.<\/p>\n

So inspired by his most mouthwatering creation, I\u2019ve gone all out for Shrove Tuesday with fluffy, light-as-air hotcakes smothered in lashings of Manilife peanut butter<\/a> and caramel sauce, then topped with two rashers of facon by This Isn\u2019t Bacon.\u00a0<\/a><\/p>\n

P.S. I\u2019ve also made it vegan, so everyone can enjoy food fit for the King.<\/p>\n

Ingredients (Serves 2)<\/h2>\n

For the pancakes:<\/b><\/p>\n

2 ripe bananas<\/p>\n

2 tbsp maple syrup<\/p>\n

2 tbsp coconut oil, melted, plus extra for cooking<\/p>\n

180g self raising flour<\/p>\n

\u00bd tsp baking powder<\/p>\n

110ml almond milk<\/p>\n

 <\/p>\n

For the peanut butter caramel:<\/b><\/p>\n

55g coconut oil<\/p>\n

60ml maple syrup<\/p>\n

26g Manilife chunky peanut butter<\/p>\n

This Isn\u2019t Bacon to serve<\/p>\n

Method<\/h2>\n

Step 1: <\/b>Mash 1 \u00bd bananas in a large bowl, and save the rest for garnish. Stir in the maple syrup, coconut oil and a pinch of salt. Then fold in the flour and baking powder. Whisk in the almond milk and set aside for 30 minutes.<\/p>\n

Tip:<\/b> Resting your batter gives the flour a chance to absorb the liquid, o take thirty before you fry. It’ll make the difference between a good and truly great pancake.<\/p>\n

Step 2: <\/b>Heat a non-stick frying pan over a medium heat and add 1\/6 of the batter. Fry for 2 minutes on the first side, or until you see bubbles poke out from the batter Flip, and cook for another 2 minutes or until golden brown\u00a0 then pop them in the oven to keep warm. Repeat until you have 6 pancakes.<\/p>\n

Tip:<\/b> Use a ladle or measuring jug to pour the batter.<\/p>\n

Step 3:<\/b> Melt the coconut oil in the microwave (or in a pan over a low heat) then whisk in the maple syrup and Manilife peanut butter. This is your nutty caramel sauce.<\/p>\n

Tip:<\/b> When you get to the flip, don\u2019t lose your nerve. Channel your inner rock god, wait for lots of bubbles and remember \u2014 it\u2019s all in the wrist.<\/p>\n

Step 4: <\/b>Cook the vegan bacon according to the packet instructions.
