To replace bacon, we\u2019ve gone with crispy Marmite mushrooms to keep it vegetarian. Then once they&#8217;re roasted, just add &#8217;em to your creamy sauce, stir in al dente linguine and <em>lots<\/em> of cheese, and dive in.<\/p>\n<h2>Marmite Mushroom Carbonara Recipe<\/h2>\n<p>Serves : 2 people<\/p>\n<p>Cook Time : 30 minutes<\/p>\n<p>Difficulty: Easy<\/p>\n<h2><b>Ingredients<\/b><\/h2>\n<p>2 shallots<\/p>\n<p>3 garlic cloves<\/p>\n<p>1 egg<\/p>\n<p>40g cheddar cheese<\/p>\n<p>5g parsley<\/p>\n<p>10g chives<\/p>\n<p>\u00bd vegetable stock cube<\/p>\n<p>190g linguine<\/p>\n<p>16g marmite<\/p>\n<p>35g grated Italian hard cheese (e.g. Parmesan or Pecorino)<\/p>\n<p>160g mixed mushrooms (we love using oyster and chestnut)<\/p>\n<p>100g cr\u00e8me fraiche<\/p>\n<p>large knob of butter<\/p>\n<p>salt<\/p>\n<p>pepper<\/p>\n<p>&nbsp;<\/p>\n<h2><b>Method<\/b><\/h2>\n<p><b>Step 1:<\/b> Preheat the oven to 220\u00baC \/ 200\u00baC (Fan) \/ 425\u00baF \/ Gas 7 and boil a kettle.<\/p>\n<p><b>Step 2: <\/b>Slice the mushrooms and add them to a large bowl with half the marmite, a drizzle of olive oil and some black pepper and stir to combine.<\/p>\n<p><b>Step 3: <\/b>Add the Marmite mushrooms to a baking tray and bake for 10-15 min or until they start to crisp up then remove from the oven.<\/p>\n<p><b>Step 4: <\/b>Meanwhile, peel and finely slice the shallots and garlic. Dissolve the \u00bd vegetable stock cube and the remaining Marmite in 150ml boiled water \u2013 this is your Marmite stock and <strong>you\u2019ll need to keep this aside for later.<\/strong><\/p>\n<p><b>Step 5: <\/b>Heat a large non-stick pan over a medium heat with a large knob of butter and let it melt.<\/p>\n<p>Want a Marmite recipe that&#8217;s vegan? Why not try our\u00a0<em><a href=\"https:\/\/www.gousto.co.uk\/blog\/marmite-teriyaki-tofu-sticky-rice\">Marmite Teriyaki Tofu &amp; Sticky Rice<\/a>?\u00a0<\/em><\/p>\n<p><b>Step 6: <\/b>When the butter has melted, add the sliced shallots with a pinch of salt and cook for 4-5 min or until browned.<\/p>\n<p><b>Step 7:<\/b> Whilst the shallots are cooking, cook your linguine in a pot of boiled water (seasoned with a generous pinch of salt) for 8-10 min or until cooked with a bite (al dente). When cooked, drain and keep back some of that starchy pasta water.<\/p>\n<p><b>Step 8:<\/b> Once the shallots have browned, add the sliced garlic and cook for another 2 min or until fragrant, then add in the Marmite stock with half the cr\u00e8me fra\u00eeche. Stir until you have a smooth sauce.<\/p>\n<p><b>Step 9:<\/b> Separate the egg yolks and whites (discarding the whites) and add the yolks to a bowl with the grated Italian hard cheese and remaining cr\u00e8me fra\u00eeche and stir to combine.<\/p>\n<p><b>Step 10:<\/b> Add the drained linguine and half the Marmite mushrooms to the creamy sauce, then stir through the egg yolk mix.
