{"id":14864,"date":"2020-10-20T11:51:09","date_gmt":"2020-10-20T10:51:09","guid":{"rendered":"https:\/\/www.gousto.co.uk\/blog\/?p=14864"},"modified":"2021-01-07T10:48:02","modified_gmt":"2021-01-07T10:48:02","slug":"beetroot-pasta","status":"publish","type":"post","link":"https:\/\/www.gousto.co.uk\/blog\/beetroot-pasta","title":{"rendered":"Beetroot Pasta"},"content":{"rendered":"<div class=\"wpb-content-wrapper\"><p>[vc_row][vc_column][vc_column_text]For a truly striking dish, add beetroot puree to your homemade pasta dough to give it a stunning purple-pink hue.<\/p>\n<h2>Beetroot Pasta Recipe<\/h2>\n<p>Serves 4<\/p>\n<p><b>Cooking time: <\/b>30 minutes<\/p>\n<p><b>Total time: <\/b>1 hour<\/p>\n<h2>Ingredients<\/h2>\n<p><strong><i>For the beet puree<\/i><\/strong><\/p>\n<p>1 large beetroot<\/p>\n<p>1 tsp olive oil<\/p>\n<p><strong><i>For the pasta dough<\/i><\/strong><\/p>\n<p>3 large eggs<\/p>\n<p>60g beet puree<\/p>\n<p>375-400g \u201800 pasta flour<\/p>\n<p>Fine semolina flour, for dusting<\/p>\n<h2>Method<\/h2>\n<p><i>Make the beet puree<\/i><\/p>\n<p><b>Step 1: <\/b>Preheat the oven to 180C (fan).<\/p>\n<p><b>Step 2: <\/b>Drizzle the beetroot with a little olive oil and wrap in foil. Then place on a baking tray and roast in the oven for 45 minutes or until very tender.<\/p>\n<p><b>Step 3: <\/b>Once your beets are cool enough to handle, peel away the skin (it should come away very easily). Puree in a blender or food processor until smooth. Set aside to cool.<\/p>\n<p><i>Make the pasta dough<\/i><\/p>\n<p><b>Step 4: <\/b>On a large clean surface, pour the flour into a pile and make a well in the centre.<\/p>\n<p><b>Step 5: <\/b>Put the eggs and puree in the well and, using a fork beat thoroughly to combine. Gradually incorporate the flour into the eggs until a wet and sticky dough forms.<\/p>\n<p><b>Step 6: <\/b>Using your hands or a dough scraper, begin to incorporate more flour into the mix until the dough is firm and you can handle it easily.<\/p>\n<p><b>Tip: <\/b>You may not need all of the flour to get the dough to this point.<\/p>\n<p><b>Step 7: <\/b>Brush any remaining flour aside, and knead the dough for around 10 minutes until it becomes very smooth and elastic.<\/p>\n<p><b>Step 8: <\/b>Wrap in cling film and set aside at room temperature to rest for 30 minutes.<\/p>\n<p><i>Shape the pasta<\/i><\/p>\n<p><b>Step 9: <\/b>Divide the dough into 6 equal pieces.<\/p>\n<p><b>Step 10: <\/b>Lightly dust your work surface with flour and take one of the dough pieces \u2013 <b>covering the others with a damp cloth to stop them from drying out.<\/b><\/p>\n<p><b>Step 11: <\/b>Flatten into a rough rectangle and use a rolling pin (no rolling pin? A wine bottle works great) to roll out the pasta into a long sheet roughly 1mm thick.<\/p>\n<p><b>Step 12: <\/b>Dust with a little more flour and set aside while you repeat the process with the remaining dough.<\/p>\n<p><b>Step 13: <\/b>Using a pasta cutter or sharp knife, cut the pasta sheets into 12x12cm squares.<\/p>\n<p><i>Cook the pasta<\/i><\/p>\n<p><b>Step 14: <\/b>Bring a large pot of liberally salted water to the boil.
