Take all those delicious leftovers (turkey, roast potatoes, Brussels sprouts and \u2013 yep \u2013 even the gravy!) and transform them into a mouthwatering pot pie. <a href=\"https:\/\/www.youtube.com\/watch?v=HoHoZ2su7dc\">Check out the video here.\u00a0<\/a><\/p>\n<p><strong>Tip:<\/strong> If you&#8217;re getting tired of Christmas food, you can always make a pie and freeze it for a later date.<\/p>\n<h2>Christmas Leftovers Pot Pie Recipe<\/h2>\n<p><strong>Serves:<\/strong> 6-8<\/p>\n<p><b>Active time: <\/b>30 minutes<\/p>\n<p><b>Total time: <\/b>1 hour 30 minutes<\/p>\n<h2>Ingredients<\/h2>\n<p>320g ready-rolled puff pastry<\/p>\n<p>1 egg, beaten<\/p>\n<p><i>For the filling<\/i><\/p>\n<p>400-500g cooked turkey meat, torn into bite-size pieces<\/p>\n<p>400-500g mixed roast vegetables, such as potatoes, peas, carrots, parsnips, cabbage, and sprouts<\/p>\n<p>200-300g cooked ham, diced<\/p>\n<p>1 generous handful mixed herbs, such as parsley, thyme, rosemary or tarragon, roughly chopped<\/p>\n<p><i>For the sauce<\/i><\/p>\n<p>45g butter<\/p>\n<p>2 leeks, washes and roughly chopped<\/p>\n<p>2 tbsp plain flour<\/p>\n<p>250ml leftover gravy and 250ml chicken stock <b>or<\/b> 500ml chicken stock<\/p>\n<p>3 tsp dijon mustard<\/p>\n<p>200ml pouring cream<\/p>\n<p>Salt and freshly ground pepper<\/p>\n<h2>Method<\/h2>\n<p><strong>Step 1:<\/strong> Preheat the oven to 180\u00baC (fan).<\/p>\n<p><i>Make the sauce<\/i><\/p>\n<p><strong>Step 2:<\/strong> Melt the butter in a large saucepan over a medium heat, and add the leeks and a little salt.<\/p>\n<p><strong>Step 3: <\/strong>Cook, stirring regularly for about 7 minutes until the leeks have softened.<\/p>\n<p><strong>Step 4: <\/strong>Add the flour and stir for another minute .<\/p>\n<p><strong>Step 5: <\/strong>Add the stock mixture and mustard a little at a time so your sauce doesn&#8217;t go lumpy.\u00a0 Then bring to a simmer, stirring continuously for 2 minutes until slightly thickened.<\/p>\n<p><strong>Step 6: <\/strong>Remove from the heat, add the pouring cream and season to taste.\u00a0 Then set aside to cool.<\/p>\n<p>Not having turkey this year? Check out our <a href=\"https:\/\/www.gousto.co.uk\/blog\/vegan-christmas\"><em>10 Tips For A Merry Vegan Christmas<\/em><\/a><\/p>\n<p><i>To assemble<\/i><\/p>\n<p><strong>Step 7: <\/strong>Once the sauce is cooled, combine the filling ingredients in a 25cm pie dish and mix well.\u00a0 Pour over the sauce and stir again to mix through.<\/p>\n<p><strong>Step 8: <\/strong>Dust your countertop with a little flour and roll out the pastry a little thinner so it&#8217;s a bit bigger than the top of the pie dish.<\/p>\n<p><strong>Step 9: <\/strong>Lightly brush the edge of the pie dish with egg wash and gently lay the pastry over the filing.\u00a0 Trim the overhang with a sharp knife and use a fork to gently press around the edge, securing the pastry to the dish.<\/p>\n<p><strong>Step 10: <\/strong>If you prefer, roll the off-cuts a little thinner, and use them to decorate the top of the pie.\u00a0 Brush the pie top with egg wash and make several small holes with the tip of a sharp knife for steam to escape.<\/p>\n<p><strong>Step 11: <\/strong>Place the pie on a baking tray and bake for 35-45 minutes until the pastry is well risen and golden.<\/p>\n<h2>What is Gousto?<\/h2>\n<p>Dinner, but not as you know it.
