[vc_row][vc_column][vc_column_text]When it comes to cheese on toast nothing beats a cheesy, golden rarebit straight from the grill.<\/p>\n

But, let’s face it, though the taste is second to none (few pairings are more perfect than beer and cheese!), it’s not the prettiest of national dishes.<\/p>\n

So we’ve given the flavours of Welsh rarebit a Gousto twist with these fluffy, cheddar-stuffed scrolls that are as fun to make as they are to eat.<\/p>\n

Rarebit Cheese Scrolls Recipe<\/h2>\n

Serves 8<\/p>\n

Cooking time: <\/b>1 hour 30 minutes<\/p>\n

Ingredients<\/h2>\n

400g frozen pizza dough, defrosted<\/p>\n

For the filling<\/i><\/strong><\/p>\n

25g unsalted butter<\/p>\n

25g plain flour<\/p>\n

120ml beer (preferably stout) or milk<\/p>\n

150g Mature cheddar, grated<\/p>\n

1 large egg, lightly beaten<\/p>\n

1 tbs Worcestershire sauce<\/p>\n

2 tsp English mustard<\/p>\n

Pinch cayenne pepper (optional)<\/p>\n

Method<\/h2>\n

Step 1:<\/strong> Preheat the oven to 180\u00baC (fan).\u00a0 Line a baking tray with greaseproof parchment.<\/p>\n

Make the filling<\/i><\/strong><\/p>\n

Step 2:<\/strong> In a small saucepan, melt the butter over a medium heat. Sprinkle over the flour and continue to cook for 1 minute. Remove from the heat and add the beer (or milk if using instead) a little at a time to ensure the mixture is smooth. Return the mixture to the heat and cook, stirring continuously for 2 minutes until thick and smooth.<\/p>\n

Step 3: <\/strong>Remove the sauce from the heat. Stir through 100g of cheese – the heat from the sauce will melt it – followed by the egg, Worcestershire sauce and cayenne pepper (if using).\u00a0 Let the sauce cool while you prepare the dough.<\/p>\n

To assemble<\/i><\/strong><\/p>\n

Step 4: <\/strong>Roll the pizza dough out to a rectangle measuring 40cm x 30cm. Spread the filling evenly over the dough, leaving a 2cm border along both of the long edges.\u00a0 Sprinkle over the reserved cheese.<\/p>\n

Step 5: <\/strong>Starting with one of the long sides, roll the dough into a log, gently pinching the seam together.\u00a0 Using a serrated knife, cut the log into 12 rounds. Place the scrolls onto the prepared tray, cover with cling film or a damp clean kitchen towel and set aside for 30mins to rise.<\/p>\n

Step 6: <\/strong>Bake for 25-30 minutes. Let the rarebit scrolls cool slightly before serving.<\/p>\n
