We\u2019ve got a few recipes perfect for using up\u00a0 fresh fruit and herbs,\u00a0 plus a cheeky bit of booze that\u2019ll please any party \u2013\u00a0whether that\u2019s dinner party, houseparty or after party!<\/p>\n

\"\"<\/b><\/p>\n

Mojito Sorbet<\/b><\/p>\n

Cooking time – 4 hours<\/p>\n

Special equipment – ice cream maker<\/p>\n

10g fresh mint<\/p>\n

300g caster sugar<\/p>\n

750ml water<\/p>\n

1 tbsp finely grated lime zest<\/p>\n

125ml white rum<\/p>\n

60ml fresh lime juice<\/p>\n

Garnish, mint sprig and lime wedge<\/p>\n

Step 1: <\/b>Add mint, sugar, water and lime zest to a pan over a medium heat and simmer for 5 mins until the sugar has dissolved.\u00a0 Remove from heat, strain into a bowl and cool to room temperature.<\/p>\n

Step 2: <\/b>Mix rum and lime juice into the sugar syrup, pour into your ice cream maker. Churn the sorbet until thickened and spoon into a container. Freeze for 2 hours until completely solid. To serve, spoon into glasses and garnish with a sprig of mint and a lime wedge.<\/p>\n

Strawberry Basil Sorbet<\/b><\/p>\n

Cooking time – 3\u00bd hours<\/p>\n

Special equipment – ice cream maker<\/p>\n

500g strawberries<\/p>\n

150g caster sugar<\/p>\n

15g basil<\/p>\n

1 tsp lemon juice<\/p>\n

Step 1:<\/b> Wash, hull (remove stem and tough white bit at the top of the fruit). Halve and place in a bowl with the sugar. Stir to combine.\u00a0 Cover and set aside for 1 hour until the strawberries have started to release their juices.<\/p>\n

Step 2: <\/b>Pick the leaves from the basil and finely chop.\u00a0 Add the basil, along with the strawberries and their juice, plus the lemon juice, to a food processor. Blend until smooth.\u00a0 Strain through a fine sieve to remove any seeds.<\/p>\n

Step 3. <\/b>Pour the strawberry and basil mixture into your ice cream maker, we used this one<\/a> by Cuisinart,\u00a0 Churn the sorbet until thickened, spoon into a container and freeze for 2 hours until completely solid.<\/p>\n

Pineapple and Sage<\/b><\/p>\n

Cooking time: 40 minutes + overnight<\/p>\n

Special Equipment – food processor<\/p>\n

1 large pineapple<\/p>\n

5 sage leaves<\/p>\n

1 tbsp lime juice<\/p>\n

Step 1: <\/b>Line a baking tray with baking paper.\u00a0 Carefully remove the tough skin of the pineapple. Cut out the hard round \u2018eyes\u2019 and pineapple core. Cut into cubes and spread over a baking tray. Freeze overnight. (Skip this step by using a pre-frozen pineapple.)<\/p>\n

Step 2: <\/b>Thaw pineapple in a food processor for 10-15 minutes until slightly softened.\u00a0 Add finely chopped sage leaves and pulse until crumbly. Add the lime juice and pulse, until it forms a sorbet consistency.
