However, our version of Pad Thai brings plant based possibilities with plenty of fresh veg and spices.<\/p>\n<p>Fill your home with freshness and maybe eat-on-the-street, as you replicate this Thai favourite.<\/p>\n<p><strong>And don&#8217;t forget to share the recipe with any friends who are missing these exotic flavours, too!<\/strong><\/p>\n<h2>Ingredients (Serves 2)<\/h2>\n<p>200g Thai flat rice noodles<\/p>\n<p>1 red chilli<\/p>\n<p>1 red pepper<\/p>\n<p>1 lime<\/p>\n<p>2 garlic cloves<\/p>\n<p>25g roasted peanuts<\/p>\n<p>80g Tenderstem broccoli<\/p>\n<p>120g butternut squash cubes<\/p>\n<p>15g tamarind paste<\/p>\n<p>8ml Sriracha hot chilli sauce<\/p>\n<p>30ml soy sauce<\/p>\n<p>20g red curry<\/p>\n<p>15g fried onions<\/p>\n<h2>Method<\/h2>\n<p><strong>Step 1:<\/strong> Preheat the oven to 200\u00b0C\/ 180\u00b0C (fan)\/ 395\u00b0F\/ Gas 6 and boil a kettle. Add the butternut squash cubes to a bowl with the red curry paste and a drizzle of vegetable oil. Mix, then add to a tray. Put the tray in the oven for 15-20 mins or until cooked with a slight bite.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14459\" src=\"https:\/\/gousto.gurucloud.co.uk\/wp-content\/uploads\/2020\/08\/2118.-step-1-x750.jpg\" alt=\"\" width=\"750\" height=\"563\" srcset=\"https:\/\/gousto.gurucloud.co.uk\/wp-content\/uploads\/2020\/08\/2118.-step-1-x750.jpg 750w, https:\/\/gousto.gurucloud.co.uk\/wp-content\/uploads\/2020\/08\/2118.-step-1-x750-300x225.jpg 300w\" sizes=\"auto, (max-width: 706px) 89vw, (max-width: 767px) 82vw, 740px\" \/><\/p>\n<p>Step 2: While the butternut squash is cooking, add the Thai rice noodles to a bowl and cover with boiled water. Set aside for 12-15 min or until softened. Once softened, drain the noodles reserving a cup of starchy noodle water. Drizzle with a little vegetable oil (this prevents the noodles from sticking together!) and set aside.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14455\" src=\"https:\/\/gousto.gurucloud.co.uk\/wp-content\/uploads\/2020\/08\/2118-Step-2-v2-x750.jpg\" alt=\"\" width=\"750\" height=\"563\" srcset=\"https:\/\/gousto.gurucloud.co.uk\/wp-content\/uploads\/2020\/08\/2118-Step-2-v2-x750.jpg 750w, https:\/\/gousto.gurucloud.co.uk\/wp-content\/uploads\/2020\/08\/2118-Step-2-v2-x750-300x225.jpg 300w\" sizes=\"auto, (max-width: 706px) 89vw, (max-width: 767px) 82vw, 740px\" \/><\/p>\n<p><strong>Step 3:<\/strong> Meanwhile, deseed the red pepper[s] and cut into thin strips. Peel and finely slice (don&#8217;t chop!) the garlic. Heat a large, wide-based pan (preferably non-stick) with a generous drizzle of vegetable oil over a medium heat. Once hot, add the sliced red peppers and sliced garlic with a pinch of salt and cook for 5-6 min or until softened.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14453\" src=\"https:\/\/gousto.gurucloud.co.uk\/wp-content\/uploads\/2020\/08\/2118-Step-3-v2-x750.jpg\" alt=\"\" width=\"750\" height=\"563\" srcset=\"https:\/\/gousto.gurucloud.co.uk\/wp-content\/uploads\/2020\/08\/2118-Step-3-v2-x750.jpg 750w, https:\/\/gousto.gurucloud.co.uk\/wp-content\/uploads\/2020\/08\/2118-Step-3-v2-x750-300x225.jpg 300w\" sizes=\"auto, (max-width: 706px) 89vw, (max-width: 767px) 82vw, 740px\" \/><strong>Step 4:<\/strong> Cut the Tenderstem broccoli in half. Once the peppers have softened, add the halved Tenderstem broccoli with a splash of boiled water and cook for a 4-5 min or until the broccoli is cooked with a slight bite.<\/p>\n<p><strong><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14454\" src=\"https:\/\/gousto.gurucloud.co.uk\/wp-content\/uploads\/2020\/08\/2118.-step-4-x750.jpg\" alt=\"\" width=\"750\" height=\"563\" srcset=\"https:\/\/gousto.gurucloud.co.uk\/wp-content\/uploads\/2020\/08\/2118.-step-4-x750.jpg 750w, https:\/\/gousto.gurucloud.co.uk\/wp-content\/uploads\/2020\/08\/2118.-step-4-x750-300x225.jpg 300w\" sizes=\"auto, (max-width: 706px) 89vw, (max-width: 767px) 82vw, 740px\" \/>Step 5: <\/strong>Add the soy sauce to a bowl with the Sriracha hot chilli sauce (can&#8217;t handle the heat? Go easy!), tamarind paste and the juice of the lime[s]. Add 1 tbsp [2 tbsp] sugar and 1 tbsp [2 tbsp] water and stir it all together \u2013 this is your pad Thai sauce<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14457\" src=\"https:\/\/gousto.gurucloud.co.uk\/wp-content\/uploads\/2020\/08\/2118.-step-5-x750.jpg\" alt=\"\" width=\"750\" height=\"563\" srcset=\"https:\/\/gousto.gurucloud.co.uk\/wp-content\/uploads\/2020\/08\/2118.-step-5-x750.jpg 750w, https:\/\/gousto.gurucloud.co.uk\/wp-content\/uploads\/2020\/08\/2118.-step-5-x750-300x225.jpg 300w\" sizes=\"auto, (max-width: 706px) 89vw, (max-width: 767px) 82vw, 740px\" \/><\/p>\n<p><strong>Step 6: <\/strong>Crush the peanuts in their bag with a rolling pin.
