Bring to the boil.<\/p>\n<p>Step 2: Once the sugar is completely dissolved, remove the pan from the heat and allow it to cool.<\/p>\n<p>Step 3: Put 2 glasses in the freezer to chill.<\/p>\n<p>Step 4: Once the sugar syrup is cold, pour 1 tbsp into a shaker with a handful of ice, vodka, espresso and coffee liqueur. Slap the mint between your palms before adding them to the glass to bring out the fragrant oils without bruising the leaves.<\/p>\n<p>Serves 1<\/p>\n<p>Juice of 1 lime<\/p>\n<p>1 tsp sugar<\/p>\n<p>Small handful of mint leaves, plus more to serve<\/p>\n<p>60 ml white rum<\/p>\n<p>Soda water, to taste<\/p>\n<p>Step 1: Slap your mint leaves between your palms once, then add them to a small jug.<\/p>\n<p>Step 2: Gently muddle the lime juice, sugar and mint leaves in a small jug, crushing the mint as you go.
