Like swapping courgettes for cauliflowers, or roasted parsnips for peppers, because you know when it\u2019s in season it will taste that much better.<\/p>\n<p>So to make seasonal eating a little easier for all of us, here\u2019s how to choose, store and cook this season\u2019s best British vegetables.<\/p>\n<h2>Cabbage<\/h2>\n<p><b>How to choose it: <\/b>Look for tight, compact heads that are heavy for their size.<\/p>\n<p><b>How to store it:<\/b> Uncut cabbages can keep in the fridge for up to three weeks.<\/p>\n<p><b>How to cook it: <\/b>Roasting red cabbage in large wedges makes it tender, and really brings out the natural flavour and sweetness. Plus it won\u2019t fill your house with any boiled cabbage smell!<\/p>\n<p><b>Make this tonight:<\/b> <a href=\"https:\/\/www.gousto.co.uk\/cookbook\/vegan-recipes\/roasted-red-cabbage-wedges-nut-pesto-rice\">Roasted Red Cabbage Wedges &amp; Nut Pesto Rice<\/a><\/p>\n<h2>Cauliflower<\/h2>\n<p><b>How to choose it:<\/b> Look for a uniform creamy white color, densely packed florets that are free of blemishes, browning or wet spots. It should feel heavy for its size.<\/p>\n<p><b>How to store it:<\/b> Keep cauliflower loose in the crisper drawer, and use it within a week.<\/p>\n<p><b>How to cook it: <\/b>Like cabbage, roasting cauliflower really concentrates the flavour of this versatile vegetable. All those craggy edges get charred too, adding extra crispy texture.<\/p>\n<p><b>Make this tonight:<\/b> <a href=\"https:\/\/www.gousto.co.uk\/cookbook\/vegan-recipes\/roasted-cauliflower-korma-fragrant-rice\">Roasted Cauliflower Korma &amp; Fragrant Rice<\/a><\/p>\n<h2>New Potatoes<\/h2>\n<p><b>How to choose it: <\/b>Look for smooth, undamaged, and unblemished skins. Avoid potatoes that have soft spots, bruising, or seem damp or wet.<\/p>\n<p><b>How to store it: <\/b>Because of their thin skins and high moisture content, new potatoes don&#8217;t keep as long as mature potatoes. Keep them in a paper bag at room temperature, and use them within a few days.<\/p>\n<p><b>How to cook it: <\/b>You can boil them, or boil then crush them, or even boil, lightly crush and roast them! Being so young, they\u2019re naturally sweet. All they need is a sprinkle of flaky sea salt, butter and fresh herbs.<\/p>\n<p><b>Make this tonight: <\/b><a href=\"https:\/\/www.gousto.co.uk\/cookbook\/fish-recipes\/roasted-salmon-crushed-potatoes-lemon-caper-sauce\">Roasted Salmon, Crushed Potatoes, Lemon-Caper Sauce<\/a><\/p>\n<h2>Peppers<\/h2>\n<p><b>How to choose it:<\/b> Peppers should be firm and glossy, with taut and unwrinkled skin.<\/p>\n<p><b>How to store it:<\/b> Place them in a fabric mesh bag to keep them from getting moist. Avoid limp or yellowing leaves when buying, as this means it\u2019s starting to turn.<\/p>\n<p><b>How to store it: <\/b>When kept in the fridge, dry unwashed spinach keeps for 3-4 days. Once it\u2019s wet, it tends to deteriorate faster.<\/p>\n<p><b>How to cook it: <\/b>Fresh spinach is such an easy vegetable to cook, as it can melt into just about anything. Because it only takes seconds to cook, I like to add it right at the end of cooking so it stays vibrant and green.<\/p>\n<p><b>Make this tonight: <\/b><a href=\"https:\/\/www.gousto.co.uk\/cookbook\/chicken-recipes\/saffron-spinach-chicken-pilaf\">Saffron &amp; Spinach Chicken Pilaf<\/a><\/p>\n<h2>Pak Choi<\/h2>\n<p><b>How to choose it:<\/b> Pak choi should have perky leaves and firm stalks. The smaller they are the more tender they\u2019ll be.<\/p>\n<p><b>How to store it:<\/b> In a mesh cloth bag for up to three days.<\/p>\n<p><b>How to cook it: <\/b>With pak choi, don\u2019t be afraid of garlic, as the two work brilliantly together.
