In this easy wagamama ramen recipe you\u2019ll infuse chicken stock with Sriracha sauce to create a spicy ramen base before topping with fresh chilli, red onion, coriander, spring onion and lime.<\/p>\n<h2>What is ramen?<\/h2>\n<p>The short answer is: Noodle soup! There are lots of delicious and unique variations of ramen, but essentially it\u2019s a tasty broth with noodles.<\/p>\n<p>\u201cNoodles are the heart of ramen, but the soul of the bowl is the broth. This takes time to prepare, but the ramen itself can be served in minutes, making it a renowned \u201cfast-food\u201d in Japan. Noodles were invented by the peasants of China, but it wasn\u2019t long before they were being sold on the streets and feeding the emperor. They soon made their way to Japan, where they developed two types of noodle; one made with buckwheat, now known as soba noodle; one much fatter and made with wheat, known as udon.\u201d<\/p>\n<h2>What\u2019s the best way to eat ramen?<\/h2>\n<p>\u201cThere are many Japanese traditions and rituals when it comes to eating ramen. It\u2019s about eating it mindfully. Paying close attention to each component; firstly, to observe the finished dish, paying close attention to the glistening jewels of chilli oil or the swirling noodles and floating scallions or herbs. Allow the steam to warm your face and inhale the aromas slowly. Eat the noodles first, but don\u2019t bite them; that\u2019s bad luck! Adapted from wagamama\u2019s cookbook feed your soul (Kyle Books).<\/p>\n<p>&nbsp;<\/p>\n<h2>Ingredients for 2<\/h2>\n<ul>\n<li>1 large British chicken breast fillet<\/li>\n<li>1 chicken stock cube<\/li>\n<li>\u00bd lime<\/li>\n<li>10g coriander<\/li>\n<li>1 red onion<\/li>\n<li>1 spring onion<\/li>\n<li>15ml soy sauce<\/li>\n<li>24ml Sriracha hot chilli sauce<\/li>\n<li>1 red chilli<\/li>\n<li>15g fresh root ginger<\/li>\n<li>130g medium egg noodles<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><b>Optional add-ons:<\/b><\/p>\n<ul>\n<li>Pea shoots<\/li>\n<li>Menma<\/li>\n<li>Pak choi<\/li>\n<li>Bean sprouts<\/li>\n<li>Kimchee<\/li>\n<li>Boiled egg, peeled and halved<\/li>\n<li>Wakame or nori<\/li>\n<\/ul>\n<h2>Step 1<\/h2>\n<p>Preheat the oven to 220c (200c fan) and boil a kettle.<\/p>\n<p>Peel (scrape the skin off with a teaspoon) and finely grate the <b>ginger<\/b>, then combine it in a bowl with the <b>soy sauce<\/b> &#8211; this is your <b>ginger soy marinade<\/b>.<\/p>\n<p>Place your hand flat onto the <b>chicken breast<\/b> and slice in half as if you were cutting a burger bun, so you are left with 2 thinner pieces.<\/p>\n<h2>Step 2<\/h2>\n<p>Add the <b>sliced chicken<\/b> to the <b>ginger soy marinade<\/b> and give everything a good mix up.<\/p>\n<p>Add the <b>chicken<\/b> to a <b>baking paper<\/b>-lined baking tray and put the tray in the oven for 12-15 minutes or until cooked through (no pink meat).<\/p>\n<h2>Step 3<\/h2>\n<p>Meanwhile, peel and slice the <b>red onion<\/b> as finely as you can. Slice the <b>red chilli<\/b> finely.<\/p>\n<p>Tip: De-seed them if you can\u2019t handle the heat!<\/p>\n<h2>Step 4<\/h2>\n<p>Trim, then slice the <b>spring onion<\/b> finely. Cut \u00bd <b>lime<\/b> into wedges. Pick the <b>coriander leaves<\/b> from the stalks.<\/p>\n<h2>Step 5<\/h2>\n<p>Dissolve the <b>chicken stock cube<\/b> and <b>Sriracha hot chilli sauce<\/b> in 500ml <b>boiled water<\/b> &#8211; this is your <b>spicy ramen base<\/b>.<\/p>\n<p>Add the <b>spicy ramen base<\/b> to a pot over a very low heat and cook for 5-6 minutes or until warmed through. Re-boil a kettle.<\/p>\n<h2>Step 6<\/h2>\n<p>Add the <b>medium egg noodles<\/b> to a separate pot and cover them with <b>boiled water<\/b> until fully submerged. Bring to the boil over a high heat and cook for 5-6 minutes or until cooked with a slight bite. Once done, drain and set aside.<\/p>\n<h2>Step 7<\/h2>\n<p>Once cooked, remove the cooked <b>chicken<\/b> from the oven and slice it finely.<\/p>\n<h2>Step 8<\/h2>\n<p>Add the <b>drained noodles<\/b> to deep bowls and pour over the <b>spicy ramen base<\/b>.<\/p>\n<p>Arrange the <b>sliced chicken on top and garnish with the<\/b> <b>sliced red chilli <\/b>(can\u2019t handle the heat? Go easy!), a handful of <b>sliced red onion<\/b>, <b>spring onion<\/b>, <b>coriander leaves (<\/b>and any extra add-ons<b>)<\/b> and a wedge of <b>lime<\/b>.
