Tahini Crusted Cod
This light, healthy and lemony Middle Eastern recipe is perfect for summer! The fluffy flesh of cod, combined with oriental spices makes an uncommonly delicious and exotic recipe. The Middle Eastern side salad perfectly accompanies the fish and gets an oriental flavour boost from sumac and bahārāt.
A wine with high-acidity nicely underlines the freshness of the cod. Sauvignon Blanc, Albarino or Chablis will go well, but, if you prefer red, go for something with very low tannins as the fish’s taste wont come out if the wine is too aggressive.
