We never get bored of risotto, there’s just too much room for creative variations! Not only can it be made with any number of different vegetables, spices and herbs but even the grain that you use as the base can be varied if you don’t mind stirring off the beaten track…
A common variation is orzotto rice but as it takes a while to cook, we’ve used bulgar wheat which has a more manageable cooking time, plus it’s super tasty and healthy! Flavoured with rosemary, chilli and a rich, creamy grilled goats’ cheese this risotto is a real luxurious treat.
