Sweet’n’Sour Tofu Curry with Citrus and Coconut Milk

This dish was inspired by some of our favourite flavours and ingredients from both India and East Asia. Mild curry spices and basmati rice rub shoulders with soy sauce and citrus juices for a unique and surprisingly delicate flavour.
The ‘sweet’ part of this dish comes from using creamy coconut milk and sticky honey in the curry sauce and the ‘sour’ aspect is achieved by deglazing the pan with orange and lime juice. The combination of citrus fruit and light, mellow vegetables also means that this dish makes up four of your 5-a-day.
