Roasted Vegetable Penne with Grilled Mozzarella
There’s hardly an event more wonderful in the winter kitchen than the sight and smell of a tray brimful of roasted vegetables. Except of course the sights, smells and delicious flavors that ensue from combining said vegetables with pasta and not one, but two delicious Italian cheeses. Yes, it’s decadent, but it’s so undeniably, deliciously perfect on a chilly evening that decadence is clearly what’s called for.
We wanted to make people excited about the pasta bake again, and hopefully we’ve succeeded! There are plenty of rich flavours from hearty, fresh, classically Italian ingredients and a little bit of imagination led us to create this grown-up version of a childhood classic that no one can turn down.
The combination of melted mozzarella and parmesan cheese that top off this dish is really something extra special, but it’s the classic combination of pasta, herbs and vegetables at the root of this dish that really make it taste like home.
