Philosopher’s Pasta? It might sound Greek to you, but that’s because it is! Plato’s Pasta is a collision of two of our favourite cuisine cultures in a bowl. We like to think of it as Greek salad meets pasta puttanesca. It might sound odd, but the combination is actually richly comforting and full of delicious fresh ingredients.
This Mediterranean marvel is simultaneously summery and light and satisfying and warming thanks to a combination of capers, parsley and chilli with black olives, fresh tomatoes, red onion and feta cheese. We love linguine as the base for this dish because its thick, luscious ribbons are perfect for clinging on to the thick, chunky sauce and making all the flavours and ingredients combine together properly. You might even say it’s a perfect ingredient icebreaker!
