Mexican Grilled Salmon Steak with Crisp Potato Wedges
Sometimes it isn’t enough for us to just design a delicious recipe – we like to add a bit of flair as well! This Salmon Steak with Grilled Courgettes and Potato Wedges would be delicious with any kind of chilli, but we’ve got our hands on one particularly exciting ingredient that we really want to shout about…
The extra special chilli flavour in this recipe comes from Gran Luchito’s chilli paste, made from the rare Pasilli Oaxaca chilli, which can only be sourced from the state of Oaxaco in Mexico. We’re provided a smoked chilli paste version that is slightly fruity and extra rich, but also packs a punch – don’t say we didn’t warn you!
We originally designed this recipe to be cooked on the BBC, but it’s become a regular on the menu as we couldn’t bear to see it go. We now recommend that you cook and enjoy it whatever the weather.
