Lemon & Thyme Risotto with Hearts of Palm
An absolute classic: risotto made with Arborio rice, lemon, thyme and parmesan. Nothing else could say ‘Italian Comfort Food’ with more sophistication. But wait! We’ve added a little twist by adding an extra exotic ingredient: hearts of palm.
Hearts of palm are vegetables that come from the soft inner core of palm trees. In the past, harvesting the hearts from wild palm trees would kill the plants, but fortunately there are now variants with multiple cores. This means that when one heart is harvested, the rest of the tree continues to live, making eating the hearts of palm a much more sustainable activity!
It’s just as well, because hearts of palm are really quite delicious. They have a creamy texture and a taste a little like asparagus, which works beautifully with the rich, chunky mushrooms and fragrant thyme.
