Pomegranate-Glazed Lamb Kofta
Most countries have a version of meatballs. In fact, they date back to Roman times! While in Italy they are called polpette and are typically served with pasta and tomato sauce, in Afghanistan they are sometimes grilled on top of pizza.
Our version is heavily influenced by Middle Eastern and North African cuisine, featuring minced lamb, with cumin and coriander adding their rich flavour to the dish. The spiciness of the kofta is complemented by the sweet and sour taste of the pomegranate molasses, which in turn contrasts with the fresh and creamy yoghurt mint sauce. The courgette couscous provides a nicely neutral bed for these flavoursome combinations.
