Gorgonzola and Sage Pasta with Cranberries and Walnuts
Gorgonzola is a super strong blue cheese from Italy. While you may not imagine it going well with pasta (let alone cranberries) we’ve dared to pair the two in this Gorgonzola and Sage pasta with Cranberries and Walnuts. Alongside the subtler flavours from the sage and walnuts, it makes a show-stopping pasta dish. Far smarter than your average lasagne!
Sage is a popular herb to pair with creamy cheese, so it’s appearance here is a no brainer. The walnuts lend their unique rough texture and subtle, bitter taste to add a little touch of refinement to the dish. The cranberries are sweet, but acidic so they make an ideal antidote to the pungent notes from the cheese and nuts.
