Daikon and Lentil Curry with Coconut Rice
This Indian curry is healthy and tasty! The carrots, spinach and daikon make up most of your 5-a-day and the lentils add rich protein, carbs and other minerals, making this a very well balanced meal. The cumin seeds, ginger, chilli and coconut milk give lots of taste and further enhance this dish.
Daikon is a crunchy vegetable (from the radish family) and has a peppery punch similar to watercress. The word’s origins are Japanese and it literally means ‘large root’. Here it is also sometimes known as mooli. It can have weird shapes and can weigh up to 50kg! The long and white variety is available as a seen in Britain and grows successfully in Southern England.
