Chicken in Pomegranate Molasses with Tabbouleh Salad
All aboard the Marrakech train! Pomegranate molasses, sultanas and couscous all evoke the scents and tastes of North African cooking. Pomegranate molasses go well with chicken, giving it a sweetly tart bite, which in this recipe is nicely complemented by the mint couscous’ freshness.
A key ingredient of many Middle Eastern and North African dishes, pomegranate molasses are made by reducing pomegranate juice to a sticky syrup consistency. Most of the pomegranate molasses in the UK come from Lebanon, but a lighter Moroccan version is also available.
