At the heart of this recipe is a tray of beetroot and carrot drizzled with honey, sprin- kled with feta and cooked in a hot oven. This colourful roast is served drenched in an exotic ginger, lime and coriander dressing and served with couscous, pumpkin seeds and thinly sliced oranges. The result is rich, tangy, nutty, floral, crisp and creamy all at once.
