Japanese Udon Noodles in Hot & Sour Soup
They say a change is as good as a rest, and our Japanese-style hot and sour noodle soup manages to give you both. It’s a welcome (but still warming) change from winter stodge and a well-deserved, healthful rest before the sweet, rich demands of Christmas food (quelle horreur!) set in.
Spicy, umami flavours from the chilli and ginger broth bring soothing warmth to this dish without making it heavy, while sweet mangetout, fleshy mushrooms and spring onions bring crunchiness and fortifying vitamins.
Udon noodles are thick, doughy and made from wheat-flour that is traditionally kneaded by people’s feet. If that makes you feel a bit queasy, rest assured that we checked with our specialist Japanese supplier and our noodles are definitely kneaded by hand! Shaoxing wine, rice vinegar and soy sauce give the soup an extra rich and exotic flavour.
