Scamorza, Apricot, Radiccio Risotto
A rich, smoky and very flavoursome Italian recipe featuring an interesting juxtaposition of sweet and bitter tastes. The bitterness comes from the radicchio, which is pleasantly counterbalanced by the natural sweetness of the apricots. Red radicchio with smoked cheese is a traditional Italian combination.
For sweet recipes, choose a wine that has equal or greater sweetness. Since scamorza comes from Puglia, a good pick is Primitivo: its grapes ripen early and have naturally high sugar content caused by the hot climate.
