The Gousto Calendar: January
Welcome to January 2014! Are you excited? We are! As ever, it’s not just the promise of new opportunities for fun with food that’s making us excited to be entering a new year, it’s the new seasonal vegetables that we get to play with too!
January is traditionally the month of the health drive and as luck would have it, this month’s best veg is the perfect place to start yours. Kale and carrots are both perfect now, meaning there’s never been a better time to get them involved in your diet and make yourself healthier than ever before!
Kale is a leafy green closely related to broccoli. It has a rich, irony flavour and is spectacularly good for you, containing five times as much calcium as sprouts as well as plenty of magnesium and vitamins A, C & K.
You can serve kale raw (sliced very finely) in a salad with lemon juic, boiled or sautéed as a side dish, in pasta or in soup but it’s also amazing when baked in the oven and made into kale crisps. For maximum crispiness, smooth out any folds in the leaves before cooking for 18-20 min (turning halfway through) in a 135°C oven. Oh, and don’t forget to cover them with plenty of cumin as a heart-healthy alternative to salt!
Carrots are endlessly versatile and stuffed with vitamin A to keep your eyes, skin and teeth gleaming. What’s more, these orange (or purple!) wonders actually contain more antioxidants when cooked than they do raw, so it’s definitely time to think beyond crudités! Eat them roasted, mashed, baked, grated or added to soups and stews.
Even if you’re not on a health kick this January, eating with the seasons is a great way to keep the planet healthy too. So if your New Year Resolution is to be greener, one easy way to do it is…with greens!
